Simple Layered Fiesta Salad
~~~~~~~~~~~~~~~~~


Beat the heat with this filling dinner salad that can be tossed together in just ten minutes!

Prep: 10 min
Total: 10 min

6 cups torn romaine lettuce
1 can (15 oz.) black beans, rinsed, drained (I omitted because my girls won't eat them)
1 cup frozen corn, thawed, drained
1 1/2 cups chopped cooked chicken (cooked my own chicken breast and cut up)
1/2 cup Taco Bell Home Originals Thick 'N Chunky Salsa (used store brand)
1 cup Kraft Natural Three Cheese Crumbles (crumbled my own cheese instead of buying crumbles)
1/2 cup Kraft Ranch Dressing
1 oz. tortilla chips

Place lettuce in bottom of glass serving bowl or on serving platter.

Layer evenly with beans, corn, chicken, salsa and cheese.

Drizzle with dressing; top with chips.

Makes 4 servings, 2 cups each.

This sounds sooo good!!!Kinda reminds me of McDonalds Mexican salad...I am gonna have to try this with my smoked chopotle n cheddar dressing

Mmmm... this DOES sound good!!! I may make it meatless and use another type of bean in place of the chicken.

A very versatile recipe!
