Usually mexican or spanish rice because it is the easiest. But well all love Chi Chi's sweet corn cakes better. But they are a little more work, but well worth it.

I usually don't make anything else. DH is a carnivore and will fill up on meat and cheese.

Do you have a good recipe for spanish rice?

I serve a homemade spanish rice on the side. Basically you take the rice that you use (brown, white or what ever) and replace an equal part of water (1/2-1cup) with a runny salsa like pace. You cook it the same and it turns out great. YOu can also put it into the taco if you like.

I usually make Spanish rice (Lipton), and have sides of black beans or refried beans and then all sorts of taco toppings. My personal fav is guacamole!

i usually do some sort of rice (spanish, mexican, or puerto rican) or chips and a dip (salsa, salsa con queso, or guacamole), or a cheesy type of cornbread with green chiles.
