I have a couple different ways that I cook beef roasts, usually I do them all in the crockpot:

Beef roast, sliced onions, salt & pepper, a little water, then when it is done I shred the meat, make some au jus sauce and we have french dip sandwiches.

Beef roast, 1 packet of lipton onion soup mix, 1 can mushroom soup, sliced onions, cook on low 6-8 hrs, I like to serve this over rice or egg noodles with veggies on the side.

Beef Roast with sliced onions, carrots, potatoes, garlic and seasonings. I usually serve it with yeast rolls and maybe creamed corn or peas.

Occasionally I use the crock pot but most of the time I roast them in the oven. I make gravy from the juices. I usually make mashed potatoes and corn. My dh likes to put corn in the mashed potatoes.

I cook my beef roast in the crock-pot, serve it with rice, corn and gravy made from the juice. Sometimes I might add a salad.

Beef roast or pork roast - I cook them both in crock pot with several cans of beef gravy/water. Then, I add potatoes and onions to cook about an hour before I plan to serve.

Beef roast and au jus is yummy too.

I toss in the roast, onions, water and spices in the crock pot and cook. About an hour before it is done, I toss in the carrots-I do not like them to be mushy. I make up some mashed potatoes and make gravy from what is in the crock pot. I usually take the roast out and slice than put it back in the crock pot to keep warm and make serving it up easier.
