Well, kind of. After work I cooked up five lbs of hamburger and cooked up some meals for the next few months. I did two batches of spagetti sauce, one batch of chili-minus the beans since I didnt have any dry beans cooked, one batch for goulash-all I will have to do that night is cook up the noodles and add the meat mixture and two batches of taco meat with beans. Everything is nice and neat in the freezer. It was all a lot of things with tomato sauce, but I was just working with what I had on hand. Now I have two bags of frozen boneless, skinless chicken breasts that I am wanting to tackle and get cooked into meals and frozen. Time to really search here and other websites for some recipes. Need to take a good look at what ingredients I have on hand.

way to go thats great i need to get motivated and do that with some soups and stews for fall.

You did great! I also cook up some hamburger and just leave it plain for casseroles, etc.

I've made this and it's pretty yummy:

CP Chicken taco meat:

3 T taco seasoning
1 cup chicken broth
1 lb boneless skinless chicken breasts

1. Dissolve taco seasoning into chicken broth.
2. Place chicken breasts in crock pot and pour chicken broth over.
3. Cover and cook on low for 6-8 hours.
4. With two forks, shred the chicken meat into bite-size pieces.

Chicken enchilada casseroles

1 recipe of CP taco chicken
1 (10 oz) can cream of mushroom soup
1 (10 oz) can cream of chicken soup
16 ounces sour cream
1 (8 oz) package cheddar cheese, grated
garlic powder
8 tortillas

1. Mix soups, sour cream & chiles in large pan.
2. Add only enough broth to slightly thin. (from CP chicken meat)
3. Add chicken and diced onion.
4. In a 9x 13" casserole dish OR 2 8 x8" arrange 1/2 Tortillas flat across bottom, spoon in 1/2 the sauce, sprinkle 1/2 the cheese.
5. Repeat- Tortillas, sauce and cheese.
6. cover and freeze OR Bake in 350 degree oven for 20 minutes.


and I also make these ahead and freeze them:

(The recipe is originally from Quick Cooking but I got a modified version of it off the web)

Mozzarella Beef Roll Ups

1 lb ground beef

optional: some ground Italian sausage (I added about a 1/2 cup, yummy!)

1 medium green pepper, chopped (I didn't use)

1/3 cup chopped onion (I used onion powder instead)

8 oz pizza sauce (I used regular tomato sauce in a jar, the entire jar)

28 slices pepperoni

1/2 tsp dried oregano (I used a mixed Italian spice blend instead)

6 four tortillas, 10 inch (I used 10)

6 pieces mozzarella string cheese (I used 10 - I have also used shredded mozzarella instead)

In a large skillet, cook ground beef, sausage, green pepper and onion over medium heat until meat is no longer pink; drain. Stir in pizza sauce and spices.

Spoon about 1/2 cup beef mixture off-center on each tortilla; top with string cheese. Roll up burrito style and place seam side down on ungreased baking sheet.

Bake at 350 degrees F for 10 minutes until heated through and cheese melts.

(I freeze before baking if I'm making them ahead).

rskmom-thanks so much for your recipes. I think I am gonna make up the cp chicken taco meat. I did a little searching last night for some more recipes. Only bad thing is all my chicken is already frozen (walmart bags of frozen skinless, boneless chicken breasts), I wasnt have too much luck finding recipes. I found lots that I want to try but require the chicken to not be frozen, than prep it and than freeze it. I will have to watch my grocery flyers for chicken breasts like that.

I just recently did a bunch of those frozen chicken breasts in the crock pot. First, I thawed them in the microwave. Next, I put them in the crock pot and added water just until they were covered. I turned the crock pot on low all day, and by the end of the day the chicken was tender enough to shred.

Here's what I made with mine:
*Chicken quesadillas (added black beans, onions, cheese and threw in the quesadilla maker)
*BBQ sandwiches (just added BBQ sauce and served on a bun)
*Chicken pitas (I added hummus, tomato slices, and lettuce along with the chicken in a pita pocket)

Thanks! I have now three recipes that I am gonna do up this weekend to freeze for a later use.

BBQ chicken-toss in the cp, shred when done and freeze
CP Chicken taco meat
and Creamy Blush Sauce with Turkey and Penne-Just got it emailed to me from Campbells. Gonna use chicken instead of turkey. I will post it under the Crock pot forum.

About how many chicken breasts would you guess is one pound??? Found the answer. Three boneless, skinless chicken breasts roughly equals one pound.

Just bagged up the bbq chicken and Creamy Blush with Turkey and Penne sauce. Gonna do the cp chicken taco meat tomorrow.
