Good morning ladies!! I am needing everyones tips, ideas and recipes for summer squash, I planted a hill of it for the first time this year and I am gonna have a ton. Do you freeze it, cook it fry it? Any and all ideas and recipes will be greatly appreciated!! TIA!!!

layer sliced onions in a casserole dish
layer sliced squash
layer thinly sliced potatoes
layer shredded cheese
drizzle bottle italian dressing
repeat layers (hold cheese till last 10 minutes of cooking time)

cook at 350 about 45 minutes or until veg. are tender, sprinkle cheese on top and continue to cook till cheese is melted.

****I have also added polish or smoked sausage to this and it is great! You can also add canned mushrooms.

Fried Squash
Slice it, dip it in egg and flour and fry it in olive oil. Very, Very good. I eat them in sandwiches, my dh will just eat them like chips.

Similar to the recipe listed above....

Potato Casserole
Fry 1 lb hamburger, put in bottom of 13x9 casserole dish, layer with sliced potatoes, 1 chopped onion, 1 chopped green pepper, 1 sliced squash, salt & pepper, pour 1 jar spaghetti sauce over it. Bake @ 350 for 55-60 minutes... sprinkle with cheese, bake for 5 minutes or until the cheese is melted. I always shut the oven off and let it sit in there for a few minutes till the cheese is melted.

Roasted Vegetables
Cut squash, peppers, onion, tomatoes, cucumbers, potatoes into chunks. Sprinkle with salt & pepper and olive oil. Roast in the oven @ 450 for 40 minutes. I've also done this with just squash and cucumbers or zuchinni.

Last night I put a little olive oil in the bottom of a frying pan, chunked up some yellow summer squash and zucchini and then added some diced onion. I covered this and kept stiring.. It was wonderful.. Light and easy. I could have added some chunked chicken and made a stir fry out of it..
