One thing to about the muffin recipes
(and see here for a TON of other muffin recipes http://mommysavers.com/boards/search...earchid=984209)

kids,especially the smaller ones,love things that are THEIR size....my dd loves muffins.....but gets especially excited when they're mini muffins.(the minis work exceptionally good also for the corn dog muffins I think)

Thanks for all the great recipes. I am not sure how much the kids will be taking a lunch to school, but these are still some great recipes to have on hand for lunches on the weekends. All your muffin recipes, do they freeze and defrost nicely??

Sandwiches...for adults AND kids can get boring....

one thing I think we tend to forget that we can vary is the BREAD.

there's a LOT you can do besides a regular ole bun...

wraps obviously are always mentioned(depending on where you are ,ou can also get tortillas in various flavors now)


little kids LOVE mini bagels!!!
pita bread is great...and nice for eating on the go cause they are somewhat self contained!!!(like if you have a husband who has to eat on the road)

also,check out your bakeries...some make some really great artisan breads that can take a sandwich to a whole new lever.

another thing is the SPREADS.

french onion dip is great on a basic sub.
flavored cream cheeses work great for wraps.
bbq sauce on a chicken sandwich.

also try varying your mustards~
honey mustard is good on ham
(guys love the jalapeno and spicy brown mustards)

horseradish is awesome on roast beef(one of my fave)

another great idea,is next time you're in quiznos,subway or any sub shop~take home a menu!!!

You can always look it over for new ideas

A great idea,if you work with friends......

The Lunch Pool!!

Form a lunch-pool w/a few other people.

On one day of the week, one person makes lunch for all. It's easier to make 5of the same lunches at once,than to make a diff ones every morning.

It adds variety and keeps people thriving to come up w/good ideas for their day.

not only are they cheap,but for smaller kids, plain ole hot dog buns make for the BEST sub buns!!

2 Tbs butter, soft
1 Tbs mustard
1 Tbs mayo
4 hot dog buns, split
4 slices deli cooked turkey
4 slices American cheese
4 slices deli cooked ham
(and any veggies your kids like)

Spread a thin layer of butter onto cut sides of the hot dog buns. Mix mustard and mayonnaise and spread over butter. Layer rest of ingred and voila...mini heroes

You can do alot of sandwich spreads also with crackers,and you can get alot of healthier versions of those too.


My dd doesn't like egg salad on bread but loves it as a dip w/crackers
(hey......saves a soggy bun in a lunch box!!)

same thing with:

ham salad
chicken salad
(those type of things)

And I love all the muffin ideas, I've made the corn-dogs before. and ate them all up... Does anyone have any tried and true cold pasta recipes for kids?

5 c cornflakes
4 c cheerios
2 c small pretzels
2 c mixed nuts
1/2 c butter, melted
1/3 c grated Parmesan cheese
1.5 oz pkg 4 cheese pasta sauce mix
1 tsp basil
1 tsp parsley

Mix cereal, pretzels and nuts in large ziploc bag,toss.

Drizzle w/melted butter.Stir or shake well.

Mix parm cheese, sauce mix and herbs and sprinkle over cereal mixture,shake well.

Place on ungreased baking sheet. Bake at 325 10-12 min,stirring twice during baking. Cool and store in airtight container.
