Lunch can be such a hard one to come up with new and exciting ideas.

I made these. Changed it slightly. I used rolled biscuits. Cut each biscuit into 4ths then rolled in ball and flattened then made mini pizzas. Perfect bites sizes. I'm freezing a bunch.

1 Tbs miracle whip or mayo
2 Tbs extra virgin olive oil
1 tsp dried oregano
1/2 tsp dried parsley
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp pepper
1 pinch salt

Just mix all and use on subs.

THIS STUFF RULES!!!!!!!!!!!

Thanks for all the great ideas. We're doing lunch at home this year, but I can always use some ideas to make it more interesting as well.

My kids love the corn dog muffins. I chop up the hot dogs and mix them in so that I can use less hot dogs than the recipe calls for. It also helps with DD who likes to eat the bread and not the hot dog. She has to eat it all that way.

Pastrami Wraps(serves 4)

mix in food processor:
1/4 c cream cheese
1/4 c roasted red pepper

on 4 tortillas layer:

cream cheese sauce mix
4 lettuce leaves
4 slices pastrami
4 slices provolone
thin sliced red onion
1/2 c chopped cucumber
1 small red pepper,julienned


wrap and enjoy
