Cool recipes for everything from sandwiches and wraps to muffins(sweet n savory)
and tips on how to prepare those store bought favorites~like lunchables
and creative ideas on how to keep things hot or cold.
Lots of packers this year.......so let's make them the envy of the lunchroom

Pizza Muffins

1 1/2 c flour
1/2 c fine yellow cornmeal
1 Tbs sugar
2 tsp baking powder
1/2 tsp salt
1 egg, lightly beaten
1 1/4 c milk
1/4 c oil
1/2 c pizza sauce
1/3 c grated parmesan cheese
1/3 c pepperoni, finely chopped (or cooked sausage,or veggies)
Heat the oven to 400
Line 36 mini muffin cups with papers.
Sift:flour, cornmeal, sugar, baking powder, and salt into a large mixing bowl.
Blend the egg, milk, and oil. Make a well in the center of the dry mixture and add the liquid. Stir just til mixed.
Mix pizza sauce and parmesan.
Spoon the muffin batter into the muffin cups evenly, filling them about 1/2-3/4 full.
Spoon about 1 tsp of sauce mixture on top of each one mixing slightly. Then sprinkle with chopped pepperoni or other desired finely chopped pizza toppings. Shredded mozzarella does better if you wait until they are almost done baking and just let it melt over.
Bake 15 min,til they puff and brown at the edges. Cool in the pan for several min then remove.

Florentine Muffins

3 c flour
1 tsp salt
1 1/2 tsp baking soda
3/4 tsp baking powder
3 eggs
1 c milk
1 c vegetable oil
1 package frozen chopped spinach, thawed and squeezed dry
2 tsp fines herbes (ital mix)
1/2 c pesto sauce
1 c grated monterey jack cheese
1/4 c minced fresh garlic
Preheat oven to 375.
grease mini muffin tins.
Sift flour, salt, soda, and baking powder together.
Beat eggs with milk and add to flour mixture.
Stir in oil and spinach and mix well.
Fold in herbes, pesto, cheese and garlic.
Spoon into muffin cups and bake for 12-15 min til nicely browned.

Cheeseburger Muffins

1/2 lb ground beef
1 small onion, finely chopped
2 1/2 c flour
1 Tbs sugar
2 tsp baking powder
1 tsp salt
3/4 c ketchup
3/4 c milk
1/2 c margarine, melted
2 eggs
1 tsp mustard
8 oz shredded cheddar cheese
Preheat oven to 425.
Cook beef and onion til meat is no longer pink; drain.
Mix flour, sugar, baking powder and salt.
Combine ketchup, milk, butter, eggs and mustard.
Stir into the dry ingredients just til moistened.
Fold in the beef mixture and shredded cheese.
Fill greased mini muffin cups three-fourths full.
Bake for 15-18 min,til a toothpick inserted in the center of a muffin comes out clean.
Cool for 5 minutes before removing from pan to wire rack.
Refrigerate leftovers.

Corn Dog Muffins

2 (8.5 ounce)corn bread mix
2 Tbs brown sugar
2 eggs
1 1/2 c milk
9 hot dogs, cut in half
1 c grated Cheddar cheese
Preheat oven to 400.
Lightly grease muffin tins.
Stir together cornbread mix and brown sugar.
Whisk together eggs and milk, and then stir into dry mixture until moistened. Mix in cheese.
Spoon mixture into muffin tins until 2/3 full. Add 1 hot dog half to each muffin.
Bake 14 to 18 min,til golden brown.

Ham N Cheese Cups

1 (2 1/2oz)sliced cooked ham, chopped
2 green onions, sliced
1/2 c shredded monterey jack cheese
1 egg
1 1/2 tsp dijon mustard
1/8 tsp pepper
1 (8oz)refrigerated crescent dinner rolls
Mix first six ingredients; set aside.
Divide crescent roll dough into 24 portions.
Press into greased miniature muffin cups.
Spoon 1 tablespoon ham mixture into each cup.
Bake at 350 13-15 min,til golden brown

Lunchables are always popular....how about the "PIZZA DUNKS"...
1 (10oz) prepared pizza crust
1 Tbs butter, melted
1/2 c provolone cheese, shredded
1 Tbs parmesan cheese
1 Tbs basil
1/4 tsp garlic salt
Preheat oven to 425.
Unroll pizza dough onto greased cookie sheet and brush with butter.
Sprinkle cheeses and spices.
With a pizza cutter, cut dough lengthwise into 12 long strips. Then cut those in half to make 24 strips.
Do not seperate strips.
Bake for 10-12 min,til light golden brown.
Recut along each strip and remove from cooking sheet.
Serve sticks w/marinara sauce.

1 (8oz)brick cream cheese (soft)
16 oz sour cream
1 (1oz)packet Hidden Valley Ranch
1 lb deli ham, sliced thin but not shaved
8 large flour tortillas
Mix together cream cheese, sour cream and dry ranch dip mix.
Put a very thin layer of the cheese mixture on a tortilla, within 1 in of edge.
Place slices of ham on top.Roll up tightly in plastic wrap and place in the fridge.(you can also freeze a lil bit to make cutting easier)
Slice and voila

add hot sloppy joes mix and pack them a bun.
mac n cheese (with sliced hot dogs  )
chili n cheese also works good w/hot dogs
send milk and a container of dry cereal
pasta leftovers also work great.

I haven't thought of ALOT of warm ideas.. But I did think of quesdillas, SOUP, or even a casserole...
My DS loves his food on bread, rolls, tortillas, and PITAS...
