I buy low fat dairy products like sour cream, cottage cheese and yogurt because they just use skim milk instead. However, if you read the fat free ingredients on creamer or sour cream, they are pretty chemically and that freaks me out. I'll also buy light mayo (the 5g kind), salad dressing gets more challenging because of weird ingredients. I agree with everything in moderation, like putting your dressing on the side of your salad and dipping the tips in instead of pouring over the top. Then you can have the real stuff without going overboard.

We've been buying low fat/fat free versions of food for years.

DH has inherited high cholesterol, so we've made it a point to try and cut out fat/cholesterol as much as we can. Not only for his health, but for the kids who have a chance of inheriting the same condition.

We prefer fat free milk, but we only buy organic and at Costco they only sell the 1% version. We buy lite cream cheese, as I don't like the taste of fat free, same with cheese.

For ice cream, we either buy the fat free or lower fat or, lately, we've been buying a big tub of frozen yogurt at our local warehouse store. Much less fat and tastes really good!

I agree that you do need to watch what is substituted for fat in a product. We stay away from anything that has olestra in it.

If there is a good low fat or no fat version of a food and it doesn't cost more, I buy it.
