zuchini help

dh's grandpa gave us zucini but neither of us eat it. does anyone have any good recipes for us to try? I also have a big one that I was going to make bread/muffins out of and freeze and save as xmas gifts. I need a recipe for that also.

I just made the most delicious zucchini/blueberry bread. Yum!!! (We have a ton of zucchini in our garden.)
INGREDIENTS
* 3 eggs, lightly beaten
* 1 cup vegetable oil
* 3 teaspoons vanilla extract
* 2 1/4 cups white sugar
* 2 cups shredded zucchini
* 3 cups all-purpose flour
* 1 teaspoon salt
* 1 teaspoon baking powder
* 1/4 teaspoon baking soda
* 1 tablespoon ground cinnamon
* 1 pint fresh blueberries
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease 4 mini-loaf pans.
2. In a large bowl, beat together the eggs, oil, vanilla, and sugar. Fold in the zucchini. Beat in the flour, salt, baking powder, baking soda, and cinnamon. Gently fold in the blueberries. Transfer to the prepared mini-loaf pans.
3. Bake 50 minutes in the preheated oven, or until a knife inserted in the center of a loaf comes out clean. Cool 20 minutes in pans, then turn out onto wire racks to cool completely.

I just got this from a friend & made it the other day. Get a box of spice cake mix, and mix the cake just as the box says. Add 2 cups grated zucchini. Add some raisins. I also sprinkled in a little extra cinnamon, allspice, cloves, just because I like spice cake. Then bake. My friend did it as cupcakes but I did it as an 11x14 cake. Top w/ a dollop of cool whip. It's really good.

zucchini goes great in lots of quick breads and choc muffins and cakes....
the recipes listed above would be great(I also did some w/blueberries this year and agree it was fantastic  )there's also some posted in the dessert section I believe.

You can also shred it and put it in whatever soup or pasta you're making. My DH, who swears he hates the stuff, always seems to compliment my cooking more when I sneak it into his dinner!

Cut it in half, scoop out the center, stuff it with sausage, and roast it--30 minutes or so (you'll have to judge doneness, I can't remember how long it usually takes). If you have tomatoes, you can also do some tomatoes that way; if you put it in the same pan, the zucchini roast in a little bit of the juice off the tomatoes, which adds to the flavor, I think. But they're good without, too.

i slice it up and put it in those ziploc steam bags. drizzle with a little bit of olive oil, sprinkle salt and pepper. cook in the microwave, awesome.
