Mashed potatoes, gravy, corn and/or green beans.

I know a lot of people serve apple sauce but I've never gotten the whole pork/apple connection.

Mashed potatoes or rice - both with gravy. Sometimes scalloped potatoes. And a variety of vegetables - carrots or peas or green beans or spinach or squash or okra or brussel sprouts or corn. Just depends on what we have and what everyone is in the mood for.

My kids love to dip bite sized pieces of porkchop into applesauce. Usually I will make mac n cheese or noodles to go with it.

If it's the kind of pork chops I listed in the "how do you make your pork chops" thread, then it has to have mashed potatoes on the side. Then you spoon the sauce over the potatoes... Mmmm... I usually have corn with it too, or a salad. Since those prok chops already have a sauce I don't serve it with apple sauce. Pork roasts I do serve with apple sauce though.
