Default How to wrap meat? Without causing freezerburn..

I just bought 25 lbs of ground sirloin.. for 2.14 a lb... (the cheapest meat I've seen since I started budgeting.... (it is normally double that sometimes more)..

So now I need help wrapping it..

I plan on wrapping 3/4 lbs.. How do I do it to not get freezer burn?

I have a seal a meal and love it and you can get em at wal mart for like 30-40bucks(this is great if you freeze alot)

other wise......

trim fat
rinse well and pat dry
wrap well in plastic wrap(I like to wrap a few times and get out as much air as possible(this is the key-no air)
then wrap well twice in heavy duty foil

Get all the air out. I love my foodsaver for that kind of thing, otherwise, just put it in about a quart size or so freezerbag with ziptop, squeeze ALL the air out, and if you want to be extra sure, double bag it. If you are good at wrapping, you can saran wrap the heck out of it, but again, it has to be TIGHT - NO AIR! It's a bit different than wrapping a box.

Its GROUND, so I don't need to rinse it.. But thank you so much.... This is the first time that I am freezing something this large in quantity. I just received my deep freezer sunday and the sale was ending tonight...

Does it matter which way the foil goes?

It doesn't matter, it's just another barrier. The most important part is the plastic wrap is tight and has a lot of layers to keep it super air tight.

Are you using a scale to weight out the quantities?

The main thing is that you pack in roughly the same size amounts.

When I pack the venison burger I make, I use a 16oz plastic cup. I pack as much burger in til it's full and packed tight, then dump it in the foodsaver bags. That makes the air come out from the inside (it's packed tight), and if you plan to saran wrap, it will be in a nice tube shape. That makes it about 1lb packs.

Off to bed for me!

ETA: It's also a lot easier once you wrap it to "smoosh" it flattish (1" thick or so) , it thaws a lot easier I think. Just easier to wrap tight in a ball or tube shape.

If Im wrapping large quantities I wont use relatively quickly, I wrap in wax paper -- not plastic wrap -- and then wrap that in tin foil. I dont know why, thats what my mom always did.

i agree i use waxed paper then freezer paper(you can buy at any store where the tinfoil is) if i'm out of freezer paper i will use tinfoil.
