Best Ever Banana Bread recipe

When I make this banana bread, I get asked for the recipe all the time. Plus, it makes 2 loaves, which is great.
1/2 c vegetable shortening
1 1/4 c sugar
2 eggs
5 overripe bananas (I use frozen ones, thawed, all the time)
2 c. all purpose flour
1 teaspoon salt
2 teaspoonse baking soda
4 tablespoons wheat germ
1 c chopped nuts (optional)
Preheat oven to 350 and grease 2 8 1/2" loaf pans. Cream the shortening and sugar in the bowl of an electric mixer. Add the eggs and bananas (if using thawed frozen, include all the liquid that comes off the banana when it thaws). Blend until the bananas are thoroughly mashed. In a separate bowl, sift the flour, salt, baking soda and stir in the wheat germ and nuts if desired. Add the dry ingredients to the banana mixture and blend until just mixed. Pour the batter into the prepared pans, dividing it equally. Bake for 50 min or until the top springs back when gently pressed. I do the tooth pick test to make sure is cooked all the way through.
Can also make 24 muffins with this recipe and cut the cook time in half. This is great in the summer when you want baked goods but don't want to heat up the house.
