Okay......lets knock out the alphabet recipes......we're gonna have apples to contend with soon.........and tailgating season is coming!!!


What's your X Y Z recipes?

Yogurt Chicken
~~~~~~~~~
4 skin/boneless chicken breasts
1 (6oz)plain low-fat yogurt
1 lemon, juiced
1 c dried italian bread crumbs
1/2 tsp garlic powder
1/4 tsp onion powder
salt to taste
1/4 c butter
1 Tbs chopped parsley,opt

Preheat oven to 350.

Stir yogurt well then add lemon juice and re-stir. (~ If you do not stir the yogurt first, the lemon juice will make the yogurt curdle~)

Mix bread crumbs, garlic powder onion powder and salt.

In a 9x13 add a dollop of butter for each chicken breast.

Rinse chicken breasts and pat dry. Dip each in yogurt mix, then crumb mix.

Put chicken in dish and top each breast with a full pat of butter. Sprinkle w/parsley and bake 1 hour. Let cool for 5 to 10 minutes before serving.

2 c diced yellow squash
2 1/2 c crumbled cornbread
1/2 c butter, melted
2 tsp dried sage
1 can cream of mushroom soup
1 egg, beaten
1 large onion, chopped
1 1/2 tsp sugar
salt and pepper to taste
1/4 c milk


Boil squash 15-20 min,til tender.

Preheat oven to 350.
Lightly grease a medium sized baking dish.

Mix squash, cornbread, margarine, sage, cream of mushroom soup, egg, onion, sugar, salt and pepper, and milk.

Pour into baking dish.

Bake 30-45 min,til lightly browned.

2 c. grated zucchini (drain off liquid)
3 beaten eggs
2 c. sugar
3 tsp. vanilla
1 c. oil
1 tsp. salt
3 tsp. cinnamon
1/2 tsp. allspice
1/2 tsp. nutmeg
1 tsp. soda
1 tsp. baking powder
3 c. flour.

-Beat well eggs and sugar, add oil, vanilla and grated zucchini, beat together.
-Mix in dry sifted ingredients.
-Put into 2 greased and floured loaf pans. Sprinkle top with a mixture of sugar and cinnamon.
-Bake at 325 degrees for about 45 minutes.

1 medium onion, chopped
1 clove garlic, chopped
Cooking oil
1 medium zucchini, thinly sliced
1 (12 oz.) can stewed tomatoes, drained
1/8 tsp. oregano
1/8 tsp. Italian spice
1/4 tsp. salt
1 c. shredded cheddar cheese

-Saute onion and garlic in small amount of oil.
-Add zucchini, saute until tender. Add tomatoes and seasonings, mix well.
-Put in baking dish, bake at 400 degrees for 15 mins.
-Then cover with the shredded cheese and bake till it melts.

2 graham cracker crusts
3 (6 oz.) cartons yogurt, any flavor
1 (8 oz.) bowl Cool Whip

-Mix together and divide between the 2 pie crusts. Freeze. Serves 12.

1/2 c. margaine
2 c. graham cracker crumbs
1/4 c. sugar
2 c. flaked coconut
1 can sweetened condensed milk
2 c. chocolate chips

-Microwave margarine in 8x12 inch glass baking dish for about 1 minute.
-Stir in crumbs and sugar. Press firmly into bottom of dish.
-Stir together coconut and milk. Spoon over crust and spread evenly.
-Microwave on medium, uncovered for 9-11 minutes or until heated through, rotating dish once.
-Microwave chocolate chips on high until softened and stir until smooth.
-Spoon over coconut mixture, spread to cover.
-Refrigerate to set chocolate, about 1 hour. Cut into bars.

20 oz. can cherry pie filling
14 oz. can sweetened condensed milk
2/3 c. chopped pecans
1 1/2 c. mini marshmallows
8 oz. Cool Whip

-Mix all together and chill.

-Use a 9x13 inch glass dish (not metal). Grease bottom of dish.
-Dump in a 20 oz. can of crushed pineapple, 1 can cherry pie filling.
-Over the top put 1 box of white or yellow cake mix and level.
-Chop up 2 sticks oleo and put on top.
-Bake in a 350 degree oven for 40 minutes or until brown on edges.
-Refrigerate.

1 lb potatoes, peeled and chopped
1 Tbs canola oil
1 lb hamburger
1 large onion, finely chopped
1 red bell pepper, finely chopped
2 cloves garlic, finely chopped
1 (14oz) can beef broth
2 Tbs ketchup
1 Tbs soy sauce
1 Tbs Worcestershire sauce
1 tsp mild curry powder
1 Tbs cornstarch
2 tomatoes, coarsely chopped
1 (16oz)frozen mixed peas and carrots
1/4 c milk
1 Tbs butter
1 c shredded extra-sharp Cheddar cheese
salt and pepper to taste


Boil potatoes, and cook til tender but still firm,drain,and mash w/butter and milk.


Heat oil in a large skillet,cook hamburger and onion, red pepper, and garlic til beef done.
Stir in beef broth, ketchup, soy sauce, Worcestershire sauce, and curry powder. Bring to a boil, and simmer 3-4 min.
Mix cornstarch w/a little water to form a paste, then stir into skillet with tomatoes, peas and carrots. Cook til thickened and season w/salt and pepper. Spoon into a casserole dish.
Top w/mashed potatoes.
Sprinkle w/cheese.

Preheat oven on broiler setting.
Place under broiler for 3-5 min,til cheese is melted and speckled with brown.

Zesty Coleslaw
  • 1/2 cup mayonnaise
  • 3/4 cup creamy salad dressing (e.g. Miracle Whip)
  • 2 tablespoons prepared horseradish
  • 1 1/2 teaspoons white vinegar
  • 1 1/2 teaspoons dill weed
  • 3 1/2 tablespoons sugar
  • 1 (16 ounce) package coleslaw mix
  1. In a large bowl, mix together the mayonnaise, creamy salad dressing, horseradish, vinegar, dill weed and sugar. Add coleslaw mix, and stir to coat.
  2. Refrigerate at least 3 hours before serving to blend flavors.
