Apple Cider Sauce

Good on anything.......from ice cream,apple pie or even waffles and pancakes
2 c apple cider
2 tsp cornstarch
4 tsp water
1 Tbs butter
Boil cider over high heat til reduced to 1 c(15-20 min).
Mix cornstarch and water; add to the cider and cook, stirring,til slightly thickened, about 1 min.
Remove from heat and swirl in butter til melted. Serve warm or chilled.

This is THE ultimate apple pie perfection concoction
1 recipe pastry for a 9 inch double crust pie
1/2 c unsalted butter
3 Tbs flour
2 Tbs flour
1 Tbs cornstach
1/8 c water
1/2 c sugar
1/2 c packed brown sugar
8 Granny Smith apples - peeled, cored and sliced
Preheat oven to 425
Melt the butter,tir in flour to form a paste. Add water, sugar and brown sugar, 2 Tbs flour and cornstarch and bring to a boil. Reduce temp and let simmer.
Place the bottom crust in your pan and fill w/apples tossed w/ 1/2 the sryup mix(mound slightly)
Cover w/lattice crust.
Gently pour the sugar and butter liquid over the crust.(slowly so ya don't have run off  )
Bake 10 min,then reduce the temp to 350. Bake another 35-45 min,til apples are soft.
 Got ice cream???
*NOTE*
as tempting as it is......you never wanna serve an apple pie while still too warm....as it cools it sets and is less runny.

Apple Fritter Bread

1/2 c butter, softened
1 c sugar
2 eggs
1/4 c buttermilk
1 tsp vanilla
2 c flour
1/2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
2 c diced peeled tart apples
1/2 c chopped walnuts
TOPPING:
1/4 c sugar
1/4 c flour
2 tsp cinnamon
1/4 c cold butter
Cream butter and sugar. Add eggs, 1 at a time, beat well after each egg. Beat in buttermilk and vanilla.
Mix flour, baking soda , salt,cinnamon and add to wet mix.
Fold in apples and walnuts.
Pour into a greased 9x5 loaf pan.
TOPPING:
Mix sugar, flour and cinnamon in a bowl.
Cut in butter til it looks like coarse crumbs.
Sprinkle over batter.
Bake at 350 50-60 min,til a toothpick comes out clean.
Cool for 10 min,then remove to wire rack.

Fried Apple Pies

2 c flour
1/2 c shortening
1 tsp salt
1/2 c cold water
2 apples
1 tsp butter
1/2 c packed brown sugar
1/2 tsp cinnamon
dash or 2 of nutmeg
1 c vegetable oil
Peel and dice apples,toss w/ sugar nutmeg and cinnamon. Cook on low heat til slightly soft, then mash a few w/fork to help form a bit of a sauce and stir in 1 tsp butter.
Sift flour and salt together. Cut in the shortening. Add water and mix with fork.
Roll out to about 1/8 inch thick on a floured board. Cut with a large cookie cutter.
( yes you can cheat and use biscuits )
In each round, place 1 heaping Tbs apples. Moisten edges with cold water, fold and press edge with a fork. Pierce each one with a fork 2-3 times for steam to escape.
Heat oil in a large skillet on medium-high heat. Fry pies, a few at a time, 2-3min on each side; cook til golden brown. Drain on paper towels. Sprinkle with powdered sugar.
Better than McDonalds

This is great when you need to feed ALOT.....and it's absolutely deliscious!!!
1 1/2 c flour
1 1/2 Tbs sugar
1/2 c shortening
1/4 tsp salt
1/2 tsp baking powder
2 egg yolks, beaten
4 Tbs water
8 apples - peeled, cored and cut into thin wedges
2 Tbs lemon juice
2 Tbs flour
1 3/4 c sugar
1 tsp cinnamon
2 Tbs butter
1 c flour
1 tsp cinnamon
2/3 c brown sugar
2/3 c butter
Preheat oven to 350.
Mix flour sugar, salt and baking powder. Cut in shortening til it looks like coarse crumbs.
Mix egg yolk and water,then mix into flour til it forms a ball.
Roll out to fit the bottom of a 10x15 pan.
Mix apples, lemon juice, 2 Tbs flour, sugar and cinnamon.(pour into pie crust and dot w/2 Tbs butter)
Mix 1 c flour, 1 tsp cinnamon, 2/3 c brown sugar and 2/3 c butter.
Cut in the butter til crumbly,sprinkle over apples.
Bake 60 min,til topping is golden brown.

Old Fashioned Apple Cream Pie

Grandma use to make these years ago at the bakery!
1 (9 inch) pie crust, baked
4 c thinly sliced apples
1/2 tsp cinnamon
2 Tbs sugar
2 Tbs lemon juice
1/4 c butter
1 (8oz)cream cheese, softened
1 1/2 c milk
1 (3.5)instant vanilla pudding mix
1 tsp maple extract
Topping:
5 Tbs rolled oats
5 Tbs flour
1/2 c sugar
1 tsp cinnamon
1/4 c butter, melted
Place sliced apples in a large bowl and toss w/sugar and 1/2 tsp cinnamon and lemon juice. Melt butter in a large skillet over med heat.
Add apples to skillet and saute til tender. Let cool.
Beat cream cheese til fluffy. Gradually beat in 1 c milk,1 tsp maple extract,and pudding mix.
Add remaining 1/2 c milk, and beat til smooth.
Spread mixture into pastry shell.
Arrange apples over cream cheese layer.
Refrigerate about an hour or 2.
Top w/topping and serve.
Topping:
Mix oatmeal, flour, 1/2 c sugar and 1 tsp cinnamon. Drizzle w/1/4 c melted butter, and mix w/fork til chunky(like granola).If mixture seems too moist, add a little oatmeal or flour til the consistency is right  .
Sprinkle onto an ungreased jellyroll pan. Bake 20-25 min at 350, stirring every 8 min or so, til light golden brown and crunchy. Transfer to a bowl and let cool.

Easy Baked Apples

6 apples - peeled, cored and sliced
1/2 c sugar
3 Tbs flour
1/2 tsp each cinnamon and nutmeg
1/4 tsp ground cloves
1 tsp vanilla extract
1/2 c raisins (opt)
1/2 c chopped walnuts(opt)
1/2 c whole milk
Preheat oven to 350
Grease a 2 quart casserole dish w/pam.
Toss apples w/the mix of the sugar, flour, cinnamon, nutmeg and cloves. Stir til evenly mixed.Add in raisins and nuts.
Spoon into dish. Pour milk mixed w/vanilla over apple mix.
Cover w/foil and bake 20 min.
Uncover and bake another
25-40 min til soft and bubbly.
Cool slightly before serving.

3 c flour
2 c sugar
1 tsp baking soda
1/2 tsp salt
3 large eggs, beaten
1 c vegetable oil
2 tsp vanilla
3 c finely chopped apples
1/2 c apple juice
1 c chopped walnuts
Glaze:
1 c brown sugar
1/4 c butter
1/3 c whipping cream
Mix flour, sugar, soda and salt. Make a well in the center and set aside.
Mix eggs, oil, apple juice and vanilla. Stir in apples and nuts. Add the egg mix to dry ingredients, just til moistened.
Spread batter in a greased and floured 9x13.
Bake at 350 for 45-50 min.
In a small saucepan combine the brown sugar, butter and cream.
Cook and stir till bubbly and all the sugar is dissolved. Cool slightly.
Drizzle warm sauce over cake, after it has cooled for 5 min,let seep into the cake.
 The ultimate apple cake

1 3/4 cups flour
2 tsp. baking powder
1/2 cup sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 cup granola
1/2 cup chopped nuts( i use walnuts)
1/3 cup raisins
2 tbsp. wheat germ
1 1/2 cups UN sweetened applesauce( i make my own but store bought will work too)
1 egg
3 tbsp. veggie oil
300 degree oven( makes enough for two loaf pans...grease pans)
sift flour, powder, sugar and cinnamon and nutmeg. stir in granola, nuts, raisins and germ. set aside.
mix applesauce, egg and oil. mix both bowls together.
divide into two GREASED pans.
1 hour or until toothpick inserted is clean. cool for 30 minutes on rack.
wrap well and store in fridge or freezer.
