All of the above. It just depends on how I am cooking the chicken.

The kind of chicken we have most often is roast chicken, grilled chicken and chicken paillard.

I typically have a vegetable, the ones we eat most often are:
Carrots
Broccoli
Asparagus
Brussel Sprouts
Green Beans

And then a starch, the ones we have most often are:
Corn
Potatoes of Some Kind (we like roasted potato wedges with rosemary the best)
Risotto
Brown or Wild Rice
Rice Pilaf
Buttered Pasta with Fresh Herbs

We have a fresh green salad most nights too.

usually we have roasted chicken or bbq chicken (either in the CP or on the grill)
I serve it with a vegetable like sauteed zucchini or brussel sprouts and a starch like parmesan noodles or garlic brown rice.
Sometimes I make roasted vegetables instead with red potatoes, sweet potatoes, bell pepper, zucchini, onion and garlic (I season with chili powder and cumin)- it goes well with bbq chicken because of the sauce.
If I do a whole roasted chicken, I will do the complete chicken dinner- cornbread stuffing, mashed potatoes, gravy- it's not my favorite but dh likes it, to me it feels a little heavy and starchy.

It depends on my mood. Last night we had stuffing and mixed veggies. Sometimes I make mashed potatoes or alfredo noodles. We usually have some sort of veggie.

It really does depend on how the chicken is made. Rice is my usual standby. We like mashed potatoes when it's fried chicken or barbecue chicken. Usually broccoli if we have a vegetable with it also.
