What kind of dinners can I make using a whole chicken?

And can I make cheesy chicken and rice casserole with it or do I need to use chicken breast?

I like these two recipes.

Rotisserie Style Chicken

INGREDIENTS:
4 teaspoons salt
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon white pepper

1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 onions, quartered
2 (3 pound) whole chickens

DIRECTIONS:
1. In a small bowl, mix together salt, paprika, onion powder, thyme, white pepper, black pepper, cayenne pepper, and garlic powder. Remove and discard giblets from chicken. Rinse chicken cavity, and pat dry with paper towel. Rub each chicken inside and out with spice mixture. Place 1 onion into the cavity of each chicken. Place chickens in a resealable bag or double wrap with plastic wrap. Refrigerate overnight, or at least 4 to 6 hours.
2. Preheat oven to 250 degrees F (120 degrees C).
3. Place chickens in a roasting pan. Bake uncovered for 4 hours, to a minimum internal temperature of 170 degrees F (85 degrees C). Let the chickens stand for 10 minutes before carving.

Slow Cooker Chicken

INGREDIENTS:
1 (3 pound) whole chicken, skin removed
1/2 cup chicken broth
1/3 cup soy sauce
1/3 cup olive oil
1/4 cup honey

1 teaspoon Worcestershire sauce
2 teaspoons balsamic vinegar
2 teaspoons lemon juice
1 teaspoon sesame oil
2 tablespoons minced garlic

DIRECTIONS:
1. Remove skin from chicken, and empty inner cavity of contents within. Pat chicken dry with a paper towel, and place inside the slow cooker.
2. In a bowl, stir together the chicken broth, soy sauce, olive oil, honey, Worcestershire sauce, balsamic vinegar, lemon juice, sesame oil, and minced garlic. Pour mixture over chicken, and cover.
3. Cook chicken on low setting for 6 hours, or 3 hours on high setting

I serve this with rice and asian veggies.

I use any kind of chicken as a substitute for chicken breast, I just remove the skin and bones before using...my family never notices!

For whole chicken we make:

Beer Butt Chicken
Basically you drink 1/2 a CAN of beer (any kind) and stick it up the chicken butt, season the chicken, place the can with the chicken on top in a pan with beer or water covering the bottom and grill for about an hour.
So easy and it is so moist and yummy! My whole family loves it---just don't let the pan dry out!

I just cooked a whole chicken in the slow cooker the other day (with just s&p)and used the meat for 2 meals for the week (chicken salad & chicken chimichangas). I think you can use any chicken meat, white or dark in any recipe. I know some people don't like dark meat, but I mixed it up for both dishes and my fam didn't notice
