how do you do it?

eye ball it? ( we have a massive problem with this I believe)

wiegh things?

use smaller plates? <--------- I have done this all this week, and it seems to be helping, sorta tricking the mind.

what do you do?

I have posted before how I like to use smaller plates. New designs of dinner plates have gotten huge lately and it's easy to pile too much on.
I use a standard dinner plate and I divide it up, 1/4 protein, 1/4 starch and 1/2 veggies. If you look at 1/4 of your dinner plate, your protein should be about 4 oz and your starch about 1/2-2/3 cup (as long as you're not making a mashed potato mountain!) I hate measuring so the visual reference works better for me. It's trickier when I make something like pasta, I just put lots of veggies in it and limit my amount (like 1/2 plate pasta and 1/2 plate salad).

When I'm serious about losing weight, I measure.

I use smaller plates & bowls also.

we use smaller plates than normal dinner plates. also i have two measure searving spoons from weight watchers one is a 1/2cup one is 1 cup.

I always eat off of a salad plate and I weigh and measure almost everything. When I 'eyeball' things they have a tendency to get bigger over time.

I do Weight Watchers and this is key to success. They have a guide to help you "eyeball" things when measuring isn't an option. For example, a steak serving is the size of a deck of cards...not a game board (dang it!) LOL
