Default What are your favorite easy pumpkin recipes?

I LOVE pumpkin!
And its that time of year so thought I would look for suggestions.
I want to make muffins, cookies, puddings etc.
What are your fave recipes?

1 18 ounce package angel food cake mix (Betty CrockerŽ 1 step mix)
1 15 ounce can pumpkin
1 teaspoon pumpkin pie spice
1 cup water
1 8 ounce container frozen lite whipped topping, thawed

Mix the ingredients together, and bake as directed on cake box.
When cool, serve topped with whipped topping.

This is sooo easy

1 pkg spice cake mix
1 can pumkin

That is it, mix well and spread in grease 9 x 13 cake pan and cook according to cake mix directions. Spread with cream cheese frosting.

1/2 gallon fat-free vanilla frozen yogurt, softened
1 cup pumpkin, canned
1/2 cup brown sugar, firmly packed
1 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 tablespoon orange juice
1 graham cracker crust

Combine vanilla yogurt, pumpkin, brown sugar, ginger, cinnamon, and nutmeg. Pour into prepared crust. Freeze until ready to serve.

1 1/2 cups half & half cream
1 cup mashed cooked pumpkin
1 package vanilla pudding mix
1 tsp ground cinnamon
1/2 tsp mace
1/2 tsp nutmeg
1 tb brown sugar
1 tb raisins

Begin heating the half & half in a non stick pan. Add the pumpkin & stir well until mixed. Mix together the pudding mix, cinnamon, mace, nutmeg & sugar & add to the pumpkin mixture. Stir constantly until the mixture just begins to bubble. Add the raisins & mix well. Remove from heat & spoon into heat resistant glasses. Allow to cool, then refrigerate. Serve as is or with whipped cream & your favorite topping

Pumpkin Gooey Butter Cake

1 package yellow cake mix
1 egg
8 tablespoons butter, melted


1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
3 eggs
1 teaspoon vanilla
8 teaspoons butter, melted
1 (16-ounce) box powdered sugar
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg

Combine cake mix, 1 egg and 8 tablespoons melted butter. Mix well with electric mixer. Pour into a 13-by-9-inch pan, which has been lightly coated with vegetable spray.

Beat cream cheese and pumpkin until smooth. Add eggs, vanilla, butter and beat. Add powdered sugar, cinnamon and nutmeg. Mix well. Spread over batter and bake 40 to 50 minutes at 350 degrees.

3 pounds sweet potatoes, peeled and cut into chunks
1/2 stick butter (1/4 cup)
1 cup chicken stock (heated)
1/2 cup brown sugar
1/2 teaspoon grated nutmeg
Salt and pepper

Boil potatoes until tender, drain. Add butter a to the pot. Add the chicken stock and sugar. Mash potatoes. Season with nutmeg, salt, pepper , to your taste. Mash to combine spices and serve.

** I add a little of the chicken stock at a time, till I get the texture I want.

I do the same thing with a box of cake mix (yellow or spice) and a can of pumpkin. I make muffins and top them with a streusel topping.

1 2/3 cups all purpose flour

1 cup sugar

1 tablespoon pumpkin pie spice

1 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt

2 eggs

1 cup plain pumpkin

1/2 cup melted butter

1 cup chocolate chips

Heat oven to 350. Thoroughly mix the flour, sugar, pie spice, baking soda and powder and salt in a large bowl. Break eggs into another bowl, add pumpkin and butter and whisk until blended. Stir in chocolate chips. Pour over dry ingredients and fold in with a rubber spatula. Pour into muffin pan lined with cupcake liners and bake 20-25 minutes or until puffy and springy to the touch.

* I use 1 teaspoon cinnamon, 1/2 teaspoon nutmeg and 1/2 teaspoon ginger in place of the pie spice*

I hate anything pumpkin but dh and the kids love it so I have several recipes LOL

2 cups all purpose flour

1 1/2 cups sugar

2 teaspoons baking powder

2 teaspoons cinnamon

1 teaspoon baking soda

1/4 teaspoon salt

4 eggs, beaten

1 can (16oz) pumpkin

1 cup oil

Preheat oven to 350

Combine flour, sugar, baking powder, cinnamon, baking soda and salt. Stir in eggs, pumpkin and oil.

Spread batter in a 15x10x1 inch cookie sheet coated with cooking spray. Bake at 350 for 25-30 minutes or until toothpick inserted in center comes out clean. Cool on wire rack and frost.

Frosting

4 oz. cream cheese, softened slightly

1/4 cup softened margarine

1 teaspoon vanilla

2-3 cups powdered sugar

Beat cream cheese, butter and vanilla until light and fluffy. Gradually add sugar, beating well. Spread on pumpkin bars!
