Here's my plan so far, and on Wednesdays we eat at church and on Mondays we eat a picnic in the car (it's dance night and we eat inbetween classes).
Alice Springs Chicken, green beans, crescent rolls
Ravioli, cottage cheese
Pancakes and bacon
Cheesy ham and potatoes, peas
Pork chops and applesauce, salad, rolls
Hamburger Helper, mixed vegetables
Pot roast with carrots and potatoes, apple crisp for dessert
Baked chicken, stove top, and corn
I'm on the hunt for new recipes to try and I'll be back to edit and update.

Swedish Meatballs
1 lb. ground beef
1/4 c. fine dry bread crumbs
1/4 c. minced onion
1 egg, slightly beaten
2 tbsp. parsley flakes
1 can cream of mushroom soup I used the low-fat version
½ soup can water
1 to 2 tbsp. minced dill pickle
Cooked rice
Mix beef, bread crumbs, onion and parsley (I added salt and pepper); shape into 24 meatballs. Brown meat balls; pour off drippings. Stir in soup, water and pickle. Cover; cook over low heat for 20 minutes, stirring often. Serve with rice.
Yield: 4 servings.
Tomato Onion Parsley Salad
2 medium sweet onions , cut into 1/4-in.-thick wedges
2 pounds grape or small cherry tomatoes, cut in half (can use any kind of tomatoes)
3/4 cup chopped flat-leaf parsley(can use dried also)
1/4 cup fresh lime juice
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Instead of 2 onions I use I cucumber seeded and sliced up.
1. Put onions in a bowl of cold water and soak for 5 minutes. Drain.
2. In large bowl, toss tomatoes with onions, lime juice, salt, and pepper and cucumber if using it.
