I have a head of lettuce that is about to go bad, what should I do with it? Any ideas!? I always end up throwing it out! I only use it for burgers! I know I'm pathetic! I'm a young mommy and am still learning!

anyone have a good lettuce wrap recipe? i have chicken but no beef in the house right now so tacos are out!

I Always Used to Throw out Heads Of lettuce too.

Now , If We just need lettuce for One Meal , Like burgers, I Buy a bagged lettuce mix - These last Longer ,and Are already Chopped up , so I Just Make a Salad a few days for lunch - Easy with no waste.

Thanks taylyn! I will have to try that. Maybe I will shred up some chicken with some taco seasoning... i think I might have shells too. Hmm now I need to learn how to make refried beans out of real beans because thats all I have in there!

I'm home with my son everyday and often dh takes the leftovers for lunch. So, I boil some eggs, make egg salad and eat it in a lettuce leaf instead of bread. You can do this with chicken salad and tuna too. I've even eaten a burger in a lettuce leaf before, it's a great way to cut carbs

taco salad is super easy and yummy, you don't even have to make refried beans, just throw the beans into the salad with the chicken, shredded cheese, tomatoes, corn etc. Put some chips all around the edge. A good dressing is to mix ranch with salsa or bbq sauce.
