Here is my recipe I am handing out today. My kids LOVE this and you can double the batch and freeze for later.

Oven "Fries"

1 1/4 pounds baking potatoes, peeled and into 1/2 inch strips
3/4 tsp. salt
1/2 tsp. sugar
4 tsps.olive oil
1 tsp. paprika

Preheat the oven to 450 degrees; spray a nonstick baking sheet with nonstick cooking spray. In a large bowl, combine the potatoes, 1/4 tsp. salt and the sugar and cover with cold water. Soak for 15 minutes; drain and blot dry. In another large bowl, toss the potatoes with the oil and paprika. Place in a single layer on the baking sheet. Bake, turning the potatoes over as they brown, until cooked through and crisp, about 45 minutes. Sprinkle with the remaining 1/2 tsp. salt.

4 servings
1 serving = 3 points

Clair, Oh good it sounds like I already make fairly healthy baked fries.

My recipe uses only olive Oil and garlic powder

Cut potatoes into fries, coat with just enough olive oil and 2 tsp garlic powder tossing it well. Cook at 450 until done.

Even my kiddos like these.
