I got this from my Patti LaBelle cookbook. It's for diabetics, but in figuring points, it's not too shabby!! All the dishes I've looked at are 5 points or less. For those of us on WW's it is worth checking her book out.
1/4 C honey
1/4 C country-style dijon mustard
1 tblsp chili sauce
1 tsp mustard seed
1/2 tsp mustard powder
1/2 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
8 b/s chicken thighs (about 1 1/4 lb) trimmed of fat
In a medium bowl mix together the honey, mustard, chili sauce, mustard seed, mustard powder, salt, pepper and garlic powder. Add the chicken turning to coat. cover and marinate for at least 1 hour, or up to 6 hours.
Preheat oven to 375. Coat shallow pan w/ FF cooking spray, arrange chicken in a single layer in the pan. cover w/ foil and bake for 30 minutes. Turn chicken over and brush w/ any remaining honey-mustard mixture. Bake, uncovered, until the chicken in no longer pink in the center and the juices run clear, 20-25 minutes more.
Serves 8
Per serving 220 Cal; 24g protein; 19g carb; 6g fat; 1g Sat. fat; 0 fiber; 95mg cholesterol, 620 mg sodium.
YUM!!!
I have several more of them I've tried and and attest to them being delish. I'll post more as I get time.
