8 oz extra lean ground beef(or ground turkey)
1/4 c chopped green bell pepper
1/4 c finely chopped onion
1 c tomato sauce
1 Tbs splenda
1 tsp prepared mustard
1/8 tsp pepper
1 can Pillsbury refrigerated Flaky Biscuits
2 1/4 oz reduced fat Cheddar Cheese -- shredded

Preheat oven to 400.
Spray pan w/pam, brown the ground meat, onion & green pepper.
Drain, then add the tomato sauce, sweetener, mustard & black pepper; simmer 5 minutes.
Place each biscuit in a sprayed muffin cup, pressing dough up the sides, to the edge of the cups. Evenly spoon mixture into cups. Bake 10-15 minutes or until golden brown. Sprinkle on the cheese & continue baking for 2-3 minutes or until cheese is melted.

270 cal., 10 gm. fat, 16 gm. protein, 2 gm. fiber 6 points per 2 biscuits

1 serving cooking spray
2 c cooked chicken or turkey breast cubed
1 can black beans -- rinsed and drained
2 c fat-free sour cream
2 c shredded reduced-fat Monterey Jack cheese
4 oz chopped green chilies
2 tsp ground cumin
1/2 tsp black pepper
5 large spinach tortillas -- cut into 2-inch strips
1/2 c salsa -- mild, medium or hot


Preheat oven to 350
Coat a lasagna pan with cooking spray
Cut chicken into 1 inch pieces,add beans, sour cream, 1 cup of shredded cheese, chilies, cumin, salsa and pepper; mix well and set aside.

Arrange half of tortillas in bottom of prepared lasagna pan, overlapping pieces to cover bottom of pan.

Top tortillas with half of chicken mixture, layer with remaining tortillas and then top with remaining chicken mixture. Sprinkle with remaining cup of cheese.

Bake til filling is bubbly and cheese is melted, about 30 minutes. Let stand 5 minutes before slicing into 12 pieces. Serves 12

Marinate for 10-15 min:
4 chicken breasts (3 oz each)
2 Tbs Soy sauce
1 minced garlic clove


Then in ziploc bag add:

3 Tbs sesame seeds
3 Tbs flour
1/4 tsp salt
1/4 tsp pepper

Toss to coat chicken.
Place in baking dish, well sprayed with olive oil pam,lightly spray coated chicken. Bake at 400 for 30 minutes, or until done.

4 points per breast
