Default Veggie Quiche Cups

This recipe is from the South Beach Diet book but they taste so good. Even my dh will eat them in the morning.

1 package (10 ounces) frozen chopped spinach
3⁄4 cup liquid egg substitute
3⁄4 cup shredded reduced-fat cheese
1⁄4 cup diced green bell peppers
1⁄4 cup diced onions
3 drops hot-pepper sauce (optional)

Instructions
Microwave the spinach for 2 1/2 minutes on high. Drain the excess liquid.

Line a 12-cup muffin pan with foil baking cups. Spray the cups with cooking spray.

Combine the egg substitute, cheese, peppers, onions, and spinach in a bowl. Mix well. Divide evenly among the muffin cups. Bake at 350°F for 20 minutes, until a knife inserted in the center comes out clean.

Quiche cups can be frozen and reheated in the microwave. I tried this not thinking they would be great reheated but they really are, this is fast and easy. While I warm up the canadian bacon these pop right in the microwave. I made mine with chopped fresh mushrooms since I wanted to use them up. You could really use any veggie and cheese you wanted to.

I have tried this recipe and from my experience it was a really bland recipe. You may want to add more egg substitute than what it calls for and also add some seasoning. Otherwise, it's a very dry and spinachy taste. Not one of my favorites

I thought for sure it would taste bland but with the onion and green pepper alone it was very flavorful. I am a salt addict and didn't even need to add salt or pepper. I too thought there was a lot of spinach, considering you use the whole pkg, but I love spinach so it wasn't too much for me. I also thought it may need more of the "eggs" but I didn't add more as I'm trying to stick as close to the diet as I can. Mine did not turn out too dry though. They were very moist, even the next few days reheating in the microwave.
