I am in search of some Weight Watchers recipes that have been tested & enjoyed! I am new to this & am having difficulty spreading out my points....Thanks!

Baked Beef Ziti (5pts)

Ingredients

# 12 oz uncooked penne (or other style pasta)
# 1 tsp olive oil
# 2 medium garlic clove(s), minced
# 1/3 pound raw lean ground beef
# 1 tsp dried oregano
# 1 tsp dried thyme
# 1 tsp dried rosemary
# 1/2 tsp table salt
# 1/2 tsp black pepper
# 28 oz canned crushed tomatoes
# 1/4 cup part-skim mozzarella cheese, shredded

Fat: 6.5g
Carbohydrates: 39.5g
Calories:274.5
Protein: 19.5g

* Preheat oven to 350°F.

* Cook pasta according to package directions; drain and set aside.

* Meanwhile, heat oil in a medium saucepan over medium heat; add garlic and sauté 2 minutes. Add beef and cook until browned, breaking up meat with a spoon as it cooks, about 3 to 5 minutes; drain off any fat and set pan back over medium heat.

* Add oregano, thyme, rosemary, salt and pepper; stir to coat beef. Cook until herbs become fragrant, about 2 minutes. Add tomatoes and bring mixture to a boil; reduce heat and simmer for 5 minutes.

* Spoon a small amount of beef-tomato mixture into bottom of a 4-quart casserole dish (just enough to cover surface); top with half of cooked ziti. Next, layer with half of remaining beef-tomato sauce and half of mozzarella cheese. Layer with remaining ziti and then top with remaining beef-tomato sauce; sprinkle with remaining mozzarella cheese. Bake until cheese is golden and bubbly, about 30 minutes. Slice into 8 pieces and serve. Yields 1 piece per serving.

Balsamic Chicken w/Mushrooms

Ingredients

* 2 tsp vegetable oil
* 3 Tbsp balsamic vinegar
* 2 tsp Dijon mustard
* 1 large garlic clove(s), crushed
* 1 pound uncooked boneless, skinless chicken breast, four 4-oz pieces
* 2 cup mushroom(s), small, halved
* 1/3 cup canned chicken broth
* 1/4 tsp dried thyme, crumbled


Fat: 2.5g
Carbohydrates: 2.9g
Calories:155.5
Protein: 28.4g

* In a nonstick skillet, heat 1 teaspoon of oil.

* In a medium bowl, mix 2 tablespoons of vinegar, the mustard and garlic. Add chicken and turn to coat.

* Transfer chicken and marinade to skillet. Sauté chicken until cooked through, about 3 minutes on each side. Transfer chicken to a platter and keep warm.

* Heat remaining teaspoon of oil in skillet. Sauté mushrooms for 1 minute. Add broth, thyme and remaining tablespoon of vinegar. Cook, stirring occasionally, until mushrooms are deep brown, about 2 minutes longer.

* Serve chicken topped with mushrooms.

Number of Servings: 4

I just started weight watchers last week and am having a hard time finding kid friendly meals. I usually start off each meal with a salad. Any recipes would be great.

No it is not. I did their monthly pass program which is a weekly meeting and then e-tools (which is their online tracking system). It was $39.95 a month. Once I hit lifetime I stopped having to pay for the meetings.

They have a few different options for doing Weight Watchers. Go to Welcome to WeightWatchers.com and check it out.

I think this is a Cooking Light recipe. A little complicated but good...

Italian Stuffed Chicken - 4 pts

1 tsp olive oil - divided
3/4 c minced onion - divided
1/4 c chopped prosciutto or lean smoked ham
1 Tbs grated frsh parmesan cheese
1 Tbs dry breadcrumbs
1 1/2 tsp minced rosemary - divided
4 - 4 oz boneless skinless chix breast halves
1 c low-salt chix broth
1/4 c dry white wine
1 garlic cloved minced
Rosemary sprigs

Heat 1/2 tsp oil in nonstick skillet over medium heat. Add 1/2 c onion and saute 4 min.

Combine onion, prosciutto, cheese, breadcrumbs, and 1 tsp rosemary in bowl. Stir and set aside.

Cut horizontal slit through thickest part of each chix to form a pocket. Stuff with 3 Tbs of onion mixture.

Heat 1/2 tsp oil in skillet over medium-high heat. Add chix; saute 6 min on each side or until chix is done. Remove chix and set aside...keep warm

Add 1/4 c onion to skillet and saute 3 min. Add 1/2 tsp rosemary, broth, wine, and garlic and bring to a boil. Cook 5 minutes or until reduced to 3/4 c. Return chix to skillet; cover and simmer 2 minutes or until thoroughly heated. Serve sauce with chix. Garnish with fresh rosemary.

Easier recipe

Pineapple Chicken - 4 points

6 boneless skinless chicken breast halves; split
dash of pepper
Paprika (to taste)
1 - 20 oz can pineapple tidbits in juice
2 Tbs dijon mustard
2 Tbs soy sauce
1 clove minced garlic

Arrange chicken in bottom of crock pot. Sprinkle with pepper and paprika.

In small bowl, combine drained pineapple, mustard and soy sauce. Pour over chix. Add minced garlic. Cover and cook on LOW for 7-9 hrs or on HIGH for 3-4 hrs.

I had this dessert this weekend. I am not sure of the specifics so maybe someone who does can post. Or I am sure you can search online. It was a bag of frozen fruit (I had blueberries) and box of yellow cake mix and a can of Diet Sprite or 7-Up. Put the fruit in a dish, top with cake mix and then soda. Bake until done-I am guessing probably 30 minutes or so. It was a delicious fruit crisp and we had it with Fat Free Breyers Vanilla Ice Cream. I think it was 3 points for the fruit crisp but I am not sure on the portion size.
