It was on one of the old boards, but I wanted to say thanks!!! My family loves it and I shared with my WW class and they love it. Everybody is always asking for the recipe when they join and hear about it from the group.

It was me and you are very welcome. I love eating them because I feel like I'm being bad because they taste so good. LOL

Here is the recipe again for anyone that wants it.

Laughing Cow Cheese Potatoes

30 ounces peeled potatoes, sliced thinly (9 points total)
1 medium onion, diced (0 points)
6 wedges Laughing Cow Cheese (7.2 points total)
1 1/2 cups reduced sodium chicken broth (0 points)
seasoned salt to taste

Put sliced potatoes and onion in a Pyrex dish that has been sprayed with Pam. Sprinkle with seasoned salt. Put chicken broth and Laughing Cow Cheese into blender and blend on high speed until smooth. Pout broth/cheese mixture over potatoes and onions. Bake in a 375 oven until done.

Serves: 3
Points: Total for whole casserole - 16.2
For one serving - 5.4
***I also add garlic powder and parsley to these when I make them.
