Default Potato soup that is AWESOME and WW friendly!

Somebody in a class I was subbing for a couple of weeks ago gave me this recipe. It didn't look too good, but I tried it and it was AWESOME!!! All three of my kids loved it, too, so that makes it a winner!

Potato Soup

1 bag of hash brown potatoes (not shredded) - if you use O'Brien even more veggies
2 cups water
3 cups chicken broth
1 package Sausage Gravy mix (the dried kind like McCormick)

Whisk the water, broth and gravy mix together. Bring to a boil. Add the potatoes (frozen) and simmer for 30 minutes.

1 1/2 cup = 3 points

That's it! It was so easy!! I added a bit of Velveeta Light to make it cheesy. I added maybe 2 ounces which added 2 points to the whole soup. I also added about 4 pieces of crumbled turkey bacon (another 1 point for the whole soup). I let the kids top it with 2% cheese (2 points) so, I am figuring one serving, with the added cheese, would be maybe 6 points max. And, it was really, really good. You could add chopped up veggies of any sort to make it more filling with fewer points, too. Like I said, my kids could not get enough of it and that is a hard thing to do.

I went to the store yesterday and I couldn't find the sausage gravy mix.

Try looking for "country gravy". It is almost the same thing. I think that is what mine is called here.

Or white gravy in a packet.I think it may be called milk gravy in some places.

You can leave out the sausage if you want. I make it all the time, it's my dks' favorite with chicken and biscuits.

Yum, yum, yum! This is the best receipe for quick potato soup that I have found yet. I used Ore Ida's Potatoes O'Brien (the one with the peppers and onions) and added a bit of shredded cheddar cheese to the top just before serving. Oh, and I also threw in some frozen mixed veggies to the soup. It was soooo good and fast! Will definitely be keeping this recipe. Thanks for sharing!

I made it yesterday. I had it for dinner. The country gravy gave it a bit of a spice to it. It was good. I'm glad I didn't buy the peppered country gravy in place of the sausage gravy I couldn't find before. I don't think I would have liked too much spice to it. It also made quite a bit.

thanks Claire I made it this morning to have for lunch and my dh loved it also. He comes home everyday for lunch. I couldn't find the country/susage gravy so I just use a turkey gravey mix. It was very good. I added my own peppers and oinion. yummy. My dh was very suprised it was that good. So I will be passing it along to my sisters and MIL.

Glad you liked it. Everytime I give it to my WW members, they go nuts telling me how good it is. Like I said, somebody at WW gave it to me, it wasn't something I thought up, but we sure do like it!
