Chicken Cacciatore

8 skinless chicken thighs (about 2 pounds)
1/2 tsp. salt
1/4 tsp. ground pepper
1 tsp. olive oil
2 assort bell peppers, seeded and chopped
1 onioin, chopped
1 14.5 ounce can diced tomatoes with Italian herbs
1/4 pound white mushrooms, quartered
4 garlic cloves, minced
1/2 tsp. sugar

1. Sprinkle chicken with 1/4 tsp. salt and 1/8 tsp. pepper. Heat the oil in a large skillet. Add the chicken and cook until browned.

2. Transfer the chicken to a 5-6 quart slow cooker. Add the bell peppers, onion, tomatoes, mushrooms, garlic, sugar adn the remaining 1/4 tsp. salt and 1/8 tsp. pepper to the skillet. Cook until the vegetables begin to soften. Transfer the vegetable mixture to the slow cooker and mix well. Cover and cook until the chicken and vegetables are fork tender, 3-4 hours on high or 6-8 hours on low.

4 servings = 7 points

I dont' do step one and just throw everything in the crockpot. We had this last night and my inlaws even liked it. My dh told me 3 times that it was a keeper!

If you wanted less points, you could also up the veggies and only eat one chicken thigh. I only had one and it was PLENTY! Then it would probably be 4 points.

This does sound good. So when you did it, you just dumped the raw chix and the uncooked veggies into the crockpot and it came out okay?? I couldn't see why esp. the veggies would have to be precooked since they'd cook so much in the crock pot, but I wasn't such about the chicken. Also...do you think I could use boneless skinless chicken breasts instead. I usually use breasts for everything. TIA

Yep, I just dumped the chicken in and then everything on top of it. I cooked it for 6 hours on low and it was great. It is very soupy, but it was still good. I had left over mashed potatoes that we ate with it. It would also be good with rice or noodles.

I would use chicken breasts. That is what I usually have on hand, too, but I did buy chicken thighs at Sam's last week. I would probably use four of the breasts.
