cook some potato wedges in the oven, whenn done, pour over chilli, then some cheddar cheese, and just melt the cheese. great for watching tv! Nice change from pizza

We make what we like to call Frito Pies....you just throw some Fritos in each bowl, pour a couple scoops of hot chilli over them, top with shredded cheese, a big dallop of sour cream and some chopped green onion. It gives the chilli some texture and added flavor. This is soooooooo delicious!

Another thing I'vedone before with leftover chilli is mix some instant rice with it and use that mixture to make "burritos" with cheese and salsa and sour cream added before rolling up. These are super filling!

My ideas were basically the same as Amandaf, but we also use tortilla chips sometimes instead of Fritos.
I sometimes just mix the beans and rice together with melted cheese on top and serve just that with a green salad.

If it's a thick chili, it's great to eat hot and loaded with cheese over an omelet (like you would salsa!). That's what we always do

I serve it over brown rice with some cheese on top.

You could use it as the filling portion for these:



Mozzarella Beef Roll Ups

1 lb ground beef

optional: ~1/2 cup ground Italian sausage

shake of onion powder

8 oz pizza or tomato sauce

28 slices pepperoni

1/2 tsp Italian spice blend

10 flour tortillas, 10 inch

10 pieces mozzarella string cheese or a bag of shredded mozzarella

In a large skillet, cook ground beef, sausage, and onion over powder over medium heat until meat is no longer pink; drain. Stir in pizza sauce and spice.

Spoon about 1/2 cup beef mixture off-center on each tortilla; top with string or shredded cheese. Roll up burrito style and place seam side down on ungreased baking sheet.

Bake at 350 degrees F for 10 minutes until heated through and cheese melts.

Loved this! I made it a few days ago. I had enough chili for a 9x11 pan, so used 2 batches of jiffy cornbread and shredded cheddar cheese. This was a great way to use up chili that I was getting tired of.

I do something similar but with manicotti. I put 3 cups of chili mixed a jar of sauce and use this with the manicotti. It is so good. I make chili just so I can make this recipe!

DH says I'm weird (which I can't really deny lol) but I make a grilled cheese sandwich with a chicken pattie inside, and then smother it in cold chili. MMMMMMM DELISH!! probably would be even better with shredded cheddar and diced onions on top of that. if i don't have the chicken pattie, I just leave that out, and it's still really good.

also, i saw a recipe somewhere once where you cut up hotdogs, mix them into chili (or layer if you want), spread into casserole dish and then top with cheddar and tator tots.
