Question Need ideas for leftover chili

When I make chili, I make a HUGE pot of it and after the 5-6 of us have eaten dinner that night (includes 2 teen boys and DH) I have enough left over to fill 3-4 1/2 gallon buckets in which I freeze for another day.

From the left overs I make Taco Salads, Chili Dogs, Texas Breakfast, and usually finish up what is left by warming it up to serve just as chili.

Problem is we are burning out on these meals after doing the same thing year after year, several times throughout the winter months.

Any suggestions for new recipes that include chili? Any help would be greatly appreciated.

P.S. Before someone asks, Texas Breakfast is hashbrowns and eggs smothered in chili. Very yummy even for those of us in Nebraska.

Have you served it over cooked noodles and topped it with shredded cheddar? Sometimes, I will put crushed doritos on top of that. It also freezes very well in a casserole like this.

Nacho's,
Over Baked Potatoes,
What about mixed with cream cheese and make a chili cheese dip and eat it with Totilla chips?,
Over spaghetti noodles and topped with cheddar cheese and fresh diced onions.

Put a layer of chili in a 8x8 oven proof dish.

Cover in a layer of shredded cheese (I use cheddar).

Next, make cornbread mix (jiffy or from scratch). Pour batter over cheese and bake as directed for cornbread.

Thanks guys for the new ideas.

I will agree that chili over baked potatoes is yummy and sometimes I will do that around here just for me for lunch. Unfortunately no one else in the house will eat it and I'm not sure why as they will eat chili cheese fries. What is the difference??????

Sarahsmommy....I wonder if this is where my dad gets the idea that cornbread is what goes with chili, not cinnamon rolls. For years he has dogged me on the idea that one serves cornbread with chili, and had never heard otherwise until I fixed it with cinnamon rolls one time. Will definetly have to give that meal a try.

We tried the chili over noodles last night for supper and it got a thumbs up fix again award so there is 1 new eat to add.

I'm with your dad, sparkles! I can't make chili without cornbread. I also have to have sour cream on it. Hmm, maybe that's why I'm not a size 2.

My sister makes chili lasagna. She makes it exactly the same but uses chili instead of spaghetti sauce, cheddar instead of mozzarella cheese and mixes garlic, cayenne and cumin with the ricotta.

I haven't had it but she said it is delicious and even her picky step daughter will eat it and she won't eat anything!
