you're hiding them from yourself? I enjoyed the book Deceptively Delicious - which I borrowed from the library. It gives all kinds of examples of cooked, pureed vegetables which you mix into your meals (or desserts!) and you can't taste them at all.

A really easy one is mixing pureed vegetables into spaghetti sauce. Just cook carrots, squash etc and blend it with some water in the blender or food processor.

I agree. That's the book I was going to recommend too! The book makes it really simple and she tested all the recipes on her family so you can't tell the difference.

I haven't read that book but I hide stuff in LOTS of our meals. Tell me some of your favorite dishes and I can offer some suggestions.

I know this isn't really hiding, but how about dipping all your veggies in Ranch dressing? I don't care much for raw broccoli, cauliflower or carrots, but I just dip them in ranch dressing.

here's a good one... replace half regular flour with half sprouted wheat flour - it digests like a veggie...

I make a mean turkey meatloaf with lots of chopped up carrots, red peppers, celery (or basically whatever leftover veggies I have). My kids love it- esp. when I make the meatloaf in cupcake tins. Another way to get more veggies into your diet is in soups- just chop everything up tiny! I love veggies, so I don't have this problem, but my kids need a little encouragement!

I hate zucchini, but I love zucchini bread. Earlier this year, I grated up some Z to put in the freezer for bread later on, and then my freezer died & everything thawed out. So I had a couple days of making up a TON of food, including a giant vat of chili to use up some ground beef, ground venison, and ground chicken. Well, I didn't have time to try to make any Z bread, so I took that thawed grated Z & added it to the chili. The chili has so much seasoning and spices, and the grated Z had broken down quite a bit (drained a lot of moisture out of it) - that all it did was bulk up the chili a bit & did not affect the flavor at all.
