Yummy! Very good, made this tonight and everyone loved it. Keeper!

Got from the April 2009 TOH simple and delicious magazine. I would imagine that there is a picture of it on the website.
1/3 cup butter, cubed
2/3 cup butter and herb flavored mashed potato flakes
2/3 cup grated Parm cheese
3/4 tsp garlic powder
4 bone-in center cut pork loin chops (6oz each and 1 inch thick)
2 tblspn canola oil
In a shallow bowl, melt butter. In a large ziploc combine the flakes, cheese and garlic powder. Dip chops in butter then place in bag and shake to coat. In a large skillet, cook chops in oil over medium heat for 7-8 minutes on each side or until meat juices run clear.
** Here is what I did/used
Boneless pork chops-what I had on hand.
Coated them per directions and let them set in the fridge for 20 minutes
There was a little lo butter so I put that in the skillet along with the oil
I used my electric skillet because I was cooking six chops (enough coating for six or more chops). Worked good except my skillet has seen better days and is no longer non stick. Make sure you use a good non stick skillet so that the coating does not stick to the pan.
