zuchini boats... brown hamburg w/ onions taco seasoning. *Add to zuchini squash that has been cut in half and seeds removed. *top w/ cheese bake until squash is tender. *(you can do this faster by cooking squash first in the microwave, add beef when it's done and melt cheese)

Toasted tomatoe sandwiches (can't wait for my tomatoes to ripen!) also...Fried green tomatoes

I make the Greek Chicken that was posted on the main page of the website.

Take Chicken thighs with the skin and rub with olive oil. Then sprinkle with kosher salt and oregano. Bake on 300 for 2 hours. It turns out very moist, but the skin gets crispy.


We also do:
Grilled Cheese with tomato soup
Tuna Fish

I think that my chili turns out pretty cheap. Also sometimes I will do mac and cheese add smoked sausage and peas. Complete meal, one pot, cheap. I also like tuna melts - dh hates tuna but I love it. Make up tuna with mayo or whatever you use, spread open face on bread, top with cheese, pop in oven till cheese melts.

I also found an easy cheap recipe and it was pretty good. Brown hamburger meat, put in 13x9 baking pan, add 2 cans of red beans, 1 cup rice, chili seasoning, onion, and 2 cups tomatoe juice, top with cheese cook for about 40 minutes. I added more rice and juice to make it go further. Decent meal for something different.

I have several cheap meals like taco pie, breakfast for dinner, spaghetti, burgers, soup and grilled cheese sandwiches, pork chops with pilaf and green beans (I get sirloin chops for $1.28/lb less than $3 for meal). For me roast chicken is cheap because I get whole chickens for $.58/lb, less than $3.50 for that.

our cheapest meals are
homemade pizza
grilled cheese and tomato soup
whole roasted chicken(here i can get them as low as .39 cents a lb)
breakfast for supper
and last is souped up minute rice (i can cream of chic soup and 1 can water bring to boil then add i can of instant rice then cover and remove from heat for 5-7 minutes) my kids and dh love this one.

They are a small chain of local restaurants in Southern Il. I don't know if they are anywhere else.

But anyway theya re ground beed with onion cooked in it, drained on plain white bread with mustard. The bread gets a little soggy and really yummy. I know pretty anticlimactic.

Sort of like maidrites--brown 1 lb ground beef with 1 can chicken broth poured in skillet with it, you can add diced onion. Drain very well. serve on buns with ketchup, mustard, etc

In our house....these are most frugal meals.

chicken (boil boneless chicken, shred,add mayonaise, use onion buns or wheat buns add lettuce and tomatoes) sandwiches w/chips " A HIT IN OUR HOME!"
stir fry mix frozen veggies with chicken w/rice
teriyaki chicken w/rice
Baked chicken or wings or thighs with bbq sauce or add herbs like dill or rosemary.
grilled cheese with tomato soup
BLT...bacon lettuce tomatoes sandwiches
TACOS
hot dogs
CHILI with rice
Spagetti
Chili mac

ramen noodles...got plenty of recipes, example: add cut up chicken, celery, onions,carrots soup or Easy lettuce wraps: use the ramen noodles cooked and drain , add cooked diced teriyaki chicken, thinly sliced carrots and sliced green onions fill in the lettuce(BOSTON Lettuce is best)...dipping sauce is simple: soy sauce and sesame seed oil optional wasabi mustard.

Beef stew: my recipe: cut up stewing meats like chuck style meats ..stir fry meat until brown, add chop up/ bite sizes: onions,celery, carrots, cut up potatoes and 2 cans of tomatoe sauce...cook for 25 mins until meat is tender. serve with toasted bread or rice.

Meat loaf with mash potatoes or rice. Brown gravy.
