for lunch when I'm out of everything, I mix refried beans w/ salsa add to a flour tortilla shell (great w/ cheese if I have any)

You can really do a lot w/ flour tortillas, salads, mix any left over meat w/ salsa...it's endless really.

scrambled eggs and keilbasa

veggie chili

soups go a long way and don't really need much in them.

now that the garden is going great, we make lots of salads, you can make some boneless chicken breast w/ grilled or w/ hot sauce to make them a meal, any tiny bits of meat sliced thin is good.

This one isn't a health recipe, but my little guys like it and they'll eat their veggies. They love those awful ramon noodles, so I use only a part of a packet and make soup and and brocholi to it.

We do the ramen, too, only we add 1/2 a bag of mixed veggies. The kids love it, and it is about the cheapest thing I can make!! LOL
We also do a lot of rice or potato creations...using left over meat and veggies with cream soups to make caserolles. It stretches things further by using the left overs and rice/potatos are cheap, too!

I think that people should add recipes - it is funny how some meals are just unknown to me how to cook them b/c my mom didn't cook them when I was growing up kwim??? I love experimenting.


One of mine that is not only cheap but easy is greenbeans, smoked sausage and potatoes. Take a couple of cans of beans, cut up some potatoes, and a package of smoked sausage cut up and put in your crockpot - can do on the stove top. Let it cook all day on low - My dh LOVES it!

Chicken quarters for 19 cents a pound! Bake and serve with rice for dinner. Boil to make soup. Take l/o chicken off bone to make chicken salad, chicken w/cheese in tortillas or make whole other casserole with noodles. $2 for more than 5 full meals for the main dish - 40 cents a meal!!

Spaghetti, egg noodles w/butter & cheese, eggs, ramen noodles, pb&j & grilled cheese sandwiches - all frequent cheap meals at our house.

Boneless, skinless chicken breasts baked or cooked in skillet with cream of mushroom soup poured over top.

Mix baked beans and hot dogs, heat through.
