I took pork loins out foe dinner otnight dont know what to do with them help

Spicy Roast Pork Loin with Mashed Red Potatoes

1 5 to 6 pound pork loin roast
4 cloves garlic, minced
1 tablespoon dried whole oregano
2 teaspoons ground cumin
1/2 teaspoon pepper
1/2 cup orange juice

Trim fat from roast.
Place roast in a rack on a baking pan. Combine garlic, oregano, cumin and pepper;
rub mixture into the roast. Pour orange juice over roast. Insert meat thermometer in roast,
making sure it does not touch fat or bone. Cover and bake at 325F for 2 1/2 hours.
Uncover and bake 30 minutes or until meat thermometer reaches 160F for medium.
Let meat stand 10 to 15 minutes before serving. Serves 12 to 14.



Mashed Red Potatoes

6 pounds red potatoes, cut into chunks
1 1/2 cups butter
1 1/2 cups milk
3/4 cup sour cream
salt and pepper to taste

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm,
about 15 to 20 minutes; drain. To the potatoes add butter, milk, sour cream, salt and pepper.
Mix well and mash. 12 servings.


Or maybe

Sticky Pork Chops

1/2 cup ketchup
1/2 cup peach or apricot preserves(can also use orange marmalade)
1 tbsp canola oil
2 tsp lemon juice
2 tsp minced garlic
2 tsp hot pepper sauce
1 tsp ground black pepper
3/4 tsp salt
4-6 pork chops(this can also be made with chicken breasts)

Line a shallow roasting pan with foil. Spray foil with cooking spray.
In a microwave bowl combine the first eight ingredients.
Microwave on high 45 seconds, stir, than microwave 45 more seconds.
Dip pork chops into sauce and place in roasting pan.
Pour remaining sauce on top. Bake at 350 for 45 minutes.

I got both of these off of the old board & they are both very good. The sticky pork chop one I have made & poured over a whole pork loin & it was yummmy

I glaze 'em with a 3:2 mix of apricot preserves and honey mustard, then grill or bake 'em. Oh, yum.

OR

If it's a big pork loin roast, I cut a slit into the middle of the meat and stuff it with a compound butter (butter, thyme and garlic) and peach slices. Then I wrap it in bacon, add a little white wine to the baking dish and throw it in the oven. You may never stop eating it.

I melt some butter and throw in some honey and cinnamon. then just glaze the loins when they are almost done cooking. Gives it a nice sweet taste.
