I am greatful (especially this week w/ our limited funds) but OMG !!!!!!

I have so many zucchini squash. I have been cubing them and putting the in the freezer. Today, I made a huge pot of veggie (zucchini) chili. I don't really like to bake (refrase, I don't want to eat all the baking), but I need some ideas as to what to do with all of these squash.

Does anyone have any zuchini recipes?

Well, I take a baked potato, scoop out most of the inside,oops, cut it in half first.

Put a little oil on the inside and grill it a few minutes.

Meanwhile, I grill zucchini, squash, red onion, green peppers, whatever that I have either on the grill or stove. I add a little cheddar or mozzarella cheese and put it in the potato skin. Sometimes I sprinkle a little garlic on it too.

That won't help you use up a lot of it, but it's a different idea!!

Slice some zucchini and parboil them. *Throw them in a baking dish and top with a little barbque sauce, a little hot sauce and sprinkle swiss cheese over them. *Bake util everything is bubbly.
Or you could send them my way!!!

This isn't for dinner but you could make zucchini bread or cake with them also....I have a recipe I can post, but I need to find it first.

We slice them in circles, flour them & fry them.

We also slice them & layer them w/mozz cheese & bake them.

Cut them up, add butter, foil them up & grill them.

I'm waiting for some shredded to try this bread recipe. When baked in bread, it freezes well!

I have a yummy recipe I got in an email newsletter from Betty Crocker last year for Zuchini bars that is really good. I even froze some shredded last yr and made them thru the winter b/c the entire family loved them.

I posted somewhere last yr asking what to do w/ them and someone said you can slice them and make lasagna w/ them, using the zuchini instead of the noodles. I have never tried it but might this weekend, fil is diabetic and tries to stear away from pasta as he loves it, so thought that might be a good alternative lasagna for him!

Bake them and freeze it (breads, muffins etc) then pull them out for quick breakfasts and snacks. I've been baking a lot to do this.

I use them in spagetti instead of hamburger. I slice them up and saute them first in a liitle oil along with some onions and garlic. Then I add the spagetti sauce and a bunch of parmesan and let it simmer for a while. When its done put it on top of some spaghetti. My kids love this.

my mom makes the yummiest Zuchini bread and sprinkles chocolate chips on top and melts them.... man Im drooling thinking of them....

I like to cook them on the stovetop w/ some olive oil, yellow squash, and onions till it's mushy
