Fried Rice

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup chicken, beef, ham, or pork -- cooked and diced
1/2 pound bacon -- fried and crumbled
3 tablespoons vegetable oil
1 1/2 tablespoons soy sauce
1 teaspoon ground ginger
3 cups cold cooked rice
1/4 cup sliced green onions
2 eggs

Beat eggs slightly, till whites and yolks are thoroughly mixed. Heat 1 Tb oil in skillet or wok and pour in beaten eggs. Cook like scrambled eggs, but remove from pan before "done." The eggs should still be wet looking.

Remove eggs from pan and heat remaining oil. Stir fry rice, ginger, and meat for about two minutes, adding onion when almost done. Add soy sauce and stir, return eggs to mixture, serve.
