2 cans solid white tuna,drained
1/4 c mayo
1 tsp jijon mustard
1/8 minced celery
2 Tbs finely chopped onion
1 tablespoon chopped parsley
3/4 teaspoon red wine vinegar (you can add 1 Tbs relish-opt)
1/8 tsp salt
1/8 tsp pepper
4 slices seedless rye bread
8 slices Swiss cheese
tomato slices(opt)
paprika
Preheat broiler.
In a bowl, mix the tuna, mayonnaise,mustard, celery, onion, parsley, salt,pepper,and vinegar
Place rye bread slices on a baking sheet, and broil 1 minute in the preheated oven, until toasted. Remove from heat, spread with the tuna salad. Place 1 cheese slice over the tuna salad on each piece of bread, layer with a tomato slice(opt), and top with remaining cheese slices. (lightly sprinkle with paprika)
Return to oven, and broil 3 to 5 minutes, til cheese is melted.
