4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
1 c basil pesto
4 thick slices mozzarella cheese

Preheat the oven to 350.
Sread 2 Tbs pesto onto each flattened chicken breast.then slice of cheese,roll up, and secure with toothpicks. Place in a lightly greased baking dish.

Bake uncovered 45 to 50 min,til chicken is browned and juices run clear.

This sounds yummy, but I have probably the dumbest question ever, how do you best flatten your chicken without making a complete mess? Use a Ziploc and mallett? Also, is it best to do it while it is slightly frozen (like steak is easier to cut that way?). Please enlighten me!

use ziplock bag with a mallett and be careful you don't pound it to thin or it will tear apart.It needs to be thawed out too.
