Here is another I want to try that sounds really good to me.
Creamy Green Chili Cajun Chicken
2 Boneless Skinless Chicken Breasts
Cajun Seasoning (homemade or store bought)
1 can Low Fat Cream of Chicken Soup 1/2 c. Water
4 oz. can Diced Green Chilies
1 tsp. Lemon Juice
1/4 c. Low Fat Sour Cream
3 oz Cream Cheese
Hot Cooked Rice
Coat chicken generously with Cajun seasoning. Heat a bit of olive oil in a skillet and add chicken. Cook until no longer pink over medium/low heat.
Combine soup, water, green chilies and lemon juice. Pour over chicken and bring to a boil. Reduce heat and simmer over low for 10 minutes. Stir in sour cream and cream cheese and heat through until cheese is melted. Serve over hot rice.
