1 1/2 lbs lean pork, thinly sliced
1/4 c cornstarch
2 tsp sugar
5 Tbs soy sauce
3 Tbs oil
2 Tbs shortening
2 c water
1 1/2 c sliced celery
1 onion, chopped
1 Tbs molasses (do NOT skip this Ingr

)
1 (8oz)can sliced water chestnuts
1 lb bean sprouts
1 (4oz)can mushrooms, drained
salt and pepper
1 bunch green onions
toasted whole blanched almonds (opt)
Cut meat into strips.
Mix 2 Tbs cornstarch with sugar, blend in 1 tbsp soy sauce and 2 tbsp oil; mix to blend.
Pour over pork strips;toss well to coat, marinade in mixture for 15 min.
In wok brown the meat lightly on all sides in hot shortening.
Add remaining 4 Tbs soy sauce and 1-1/2 c water,simmer, covered on low for 45 min.
Add in the celery and onions; simmer for 15 min more.
Mix remaining cornstarch with 1/2 c water,stir into meat mix.
Add molasses, water chestnuts, bean sprouts and mushrooms,heat thoroughly.
Season with salt and pepper.
Garnish with chopped green onions and toasted almonds.
