Default Sweet and Sour Chicken

Sweet and Sour Sauce:

1 cup water
5 Tbs vinegar (I use rice or white)
6 Tbs sugar
2 Tbs ketchup
4 tsp cornstarch

Put it all in a small pot and bring to a boil. Stir frequently. Boil for a minute, remove from heat.

I add the cornstarch and water first, and mix those until the cornstarch is dissolved. The rest dissolve easily with stirring and heat. Add more vinegar for more "sour", more sugar for more "sweet".

Chicken:
Chicken breasts - - usually 1/2 to a whole breast per person.
About cup of flour
1 or 2 beaten eggs OR can of beer OR 1 cup of milk.

Cut up chicken breasts into cubes (meat only, no skin).

Batter with flour. Personally I like dipping in a beaten egg then plain flour. Some use beer as the liquid, some milk. For more "coating" dip in whatever liquid, then flour, then liquid (carefully) then flour.

Fry until chicken is cooked through - I use a deep fryer - they are done when they float!

You can add pineapple or chunks of green pepper to the sweet and sour sauce after you cooked it, and let it simmer for a few minutes. I like mine plain.
