2 bunches fresh rosemary
1 Lg red onion, thinly sliced
2 lbs salmon fillets, with skin
2 Lg lemons, thinly sliced
1/3 c olive oil
salt and pepper
Place half of rosemary sprigs in a single layer in the center of a baking pan.
Place onion on top of that,then salmon on top skin side down.
Sprinkle w/salt and pepper.
Cover w/last rosemary sprigs and layer lemon on top.
Drizzle olive oil over all.
Sprinkle with salt.
Roast salmon @ 500 about 20 min,til cooked through.
Serve w/onions and lemon.
