Default Quick but Healthy Lunch ideas?

Hey Gals,

Any of you have easy healthy lunch ideas? My dd is in preschool two days a week and we end up getting home right around lunch time and everyone is crazy hungry.. me included. Anything you can think of that is quick?

Try having things that you can prepare the night before or in the morning. Bagged lettuce with cooked chicken for chicken salad. Sandwiches are always quick. If you like tunafish, make the tuna salad the night before. Cheese and crackers. Slice the cheese ahead of time. Leftovers. Buy lean cuisines when they are half off. You can have one heating in the microwave for yourself while you are whipping up a sandwich or some soup for the kids. Soup heats fast on the stove, and if you don't want canned, this is something else that can be prepared ahead of time.

I agree w/all the above but another thing that works great and can be made in 100 diff ways is pasta salad.

We also love wraps...just slap on a tortilla and roll...lunch meat,tuna,microwaved chicken nuggets w/a drizzle or ranch or bbq sauce,even pb&j zapped 10sec are loved by kids!

Another thing I do is pre-plate certain leftovers...then you just shove the already prepped plates in the miowave,zap and eat.

english muffin pizzas work well also...have all your stuff prepped and set out and ready for when ya get home,they assemble in a flash and you only need a few min in the oven or toaster oven.
