I saw a cheater-recipe for chicken pot pie in a magazine recently: 1-lb cooked and cut up chicken, frozen mixed veggies, and a can of low-fat cream of mushroom soup mixed together, topped with biscuit batter (they suggest low-fat here, too), and popped into the oven for 30 min. at 400. It was super quick and easy and I made two at once so I could freeze one for later. DH loved it... but next time I will definitely use cream of chicken soup instead. I'm not a fan of the mushroom flavor.
