Default Chicken Pot Pie..YUMMY!!!

I had nothing planned for supper..and nothing much in the freezer...or so I thought. I pulled out a few chicken thighs..and put them on to boil. I was grasping at just what to do with them, though, as chicken is not dh's favorite meal. Well, deep in the freezer I find two pie crusts...we won't even talk about their expiration dates ..and I found a bag of mixed veggies. So, I pull out my cookbook...and yep, there is my old recipe, which hasn't seen the light of day in ages! In ten minutes, I had a chicken pot pie in the oven...and do you know even my five year old "I don't eat peas and carrots" ate EVERY bite?!?! It was DELICIOUS and the best part was that it was what we had in the freezer..no money spent!!!
My recipe, for any interested...
4 chicken thighs, boiled and pulled off in chunks (save the water you boiled them in)
Melt 1 stick of butter in a sauce pan, add in diced onion (or dried onion to taste), salt, pepper, and 3/4 c. flour. Stir until bubbly. Add in 2 cups of the chicken broth made from the water the chicken boiled in and 1 c. milk. Stir until lightly boiling. Add in the veggies (1 package of mixed or peas/carrots) and chicken..and pour into pie crust. Top with a second pie crust and bake 30 minutes at 400.

Yummy! Jennifer, that sounds great. I have a question....could you make the filling and then put biscuits on top instead of a pie crust??

I would think you could! I may have to try that...don't tell..but I used pie crusts that expired in December of 2000!!!!! YIKES! They tasted GREAT, but I did hav canned biscuits right in the fridge door!!

I love chic pot pie, too. I make it very similarly but to the chicken and veggies I just add one can of cream of chic soup and one can cream of potato soup. It's probably not as cheap, but it cuts out a step.

I have a chicken stew recipe that I use for pot pies, and I always buy skin on/bone in chicken breasts and thighs for it, and roast them in the oven. You get a lot more flavor that way IMO. It's really not hard to make it homemade, and I usually have all the fixings on hand. I hardly ever make my own pie crust, because I just don't feel I do it all that well, so I just use the Pilsbury refrigerated version.

3 whole (6 split) chicken breasts (or combo of breasts & thighs)
3 T Olive Oil
Kosher Salt
Freshly Ground Black Pepper
5 C Chicken Stock (preferably homemade but canned is fine too)
2 Chicken Bouillon Cubes
12 T Unsalted Butter
2 C Yellow Onions (chopped)
3/4 C Flour
2 C Carrots (chopped and blanched for 2 minutes)
1 10oz Pkg Frozen Peas
1/2 C Fresh Parsley (minced)

* I also use other veggies that I have on hand, corn, celery, lima beans, green beans, potatoes etc Just depends on what I have around...

Preheat the oven to 375 degrees F.

Place the chicken breasts on a sheet pan and rub them with olive oil. Sprinkle generously with salt and pepper. Roast for 35 to 40 minutes, or until cooked through. Set aside until cool enough to handle, then remove the meat from the bones and discard the skin. Cut the chicken into large dice. You will have 4 to 6 cups of cubed chicken.

In a small saucepan, heat the chicken stock and dissolve the bouillon cubes in the stock. In a large pot or Dutch oven, melt the butter and saute the onions over medium-low heat for 10 to 15 minutes, until translucent. Add the flour and cook over low heat, stirring constantly, for 2 minutes.

Add the hot chicken stock to the sauce. Simmer over low heat for 1 more minute, stirring, until thick. Add 2 teaspoons salt, 1/2 teaspoon pepper. Add the chicken, veggies and parsley and mix well.
