Thanks for some of these ideas. It seems like we've been in a lunch rut.

My 2 year old won't eat a lot of meat. Sometimes I can get him to eat hot dogs or chicken nuggets, but mostly he eats beans and eggs and peanut butter for his protein.

ETA: OK, so I did a search for something and then forgot and went through the posts that came up thinking they were new posts. I now see this post is 2 years old! LOL

when mine were that small their two faves were "going fishing"...golfish crackers( small ones) straight pretzel sticks and peanut butter. dip the pretzel into peanut butter and go fishing for the goldfish cracker( peanut butter will stick to the fishies)..they loved it. OR crackers( i used non salted saltines) a piece of pepperoni or kielbassa cut thin and a block of cheese sliced thin. cracker then meat then cheese...both of these they gobbled right up.

for sandwiches try cutting them with a metal cookie cutter. My kids loved getting the different shaped sandwiches so they never complained about eating them all the time.

My kids don't like lunch meat. We eat a lot of pbj not just on bread but also rolled up in tortillas/pita/wraps/flat bread. We also eat quesadillas often.

My son is pretty picky, but he loves beans and dips. We make an easy "salsa" with tomatillos, avacado, and cilantro and a dash of lime juice. We eat different types of beans, or puree pinto beans for "refried" beans to dip chips in. He is also a huge fan of raviolis, and I mix in a pureed veggie in the spaghetti sauce. I love the "Deceptively Delicious" cookbook by Jessica Seinfeld to hide veggies in "normal" foods because the only veggie my son will eat is peas... Lots of great stuff in that book! I'm now eating more veggies myself!
