Give us an idea of what he will NOT eat and we will all see what we can come up with. That is usually a good start.

I have three boys, ages 5, 4, and 21 months So here is what I do for lunches:

sandwiches: all kinds with different breads, wraps, etc. I am hopping to try pitas with them soon.
Chef boyardee and Soups (canned or package like ramen noodles) If you do not eat with him, you could get at least two meals out of one can of soup.
Microwave hamburger helper or kraft mac and cheese: not the healthiest, but you could open up a can of green beans or something.
Mac and cheese: plain or add in cooked hamburger (leftover taco meat works good, cut up hot dogs
frozen chicken strips or fish sticks
leftovers
rolled up lunch meat with cheese and crackers
hot pockets-my kids love the breakfast ones and the pepperoni ones. I am going to look at trying some of the other ones.

I switch around the meats w/ my 19 month dd; she usually loves ham, but I switch it up with roast beef (a little higher in fat, but higher in vitamins).
I sometimes make breakfast for lunch: egg scrambler: mix in whatever you like with scrambled eggs, we like ham & cheese.
waffles or pancakes
sweet potatoes (I usually split one between her and me cuz they can be so big)
baked potatoes (can add whatever you like)
grilled cheese w/ tomatoes and cucumbers on the side
tuna fish (if he's ready to try, my dd wasn't too fond of it the last time we tried it, but might be able to give it a go again)

hope some of these ideas help

What about a a 3 y.o. boy who won't eat meat or drink milk? I can hide ground beef in sauce w/macaronis and hot dogs..that's it...

We just got him to start drinking milk by holding back special candy treats but it's still somewhat of a battle...

Any suggestions??

Thinking back to what my DD would eat for lunch ...

1) Cheese or yogurt and a variety of fruit or veggies.

2) Hardboiled egg - she preferred just the white, not the yolk.

3) Peanut butter - she never liked jelly so I'd put peanut butter on crackers.

4) Hamburgers - plain, with catsup on a bun.

5) Spaghetti-O's

6) Mac N Cheese

7) Chicken nuggets

8) Plain noodles with a little butter and grated cheese

9) Chicken noodle soup

10) Homemade pizzas - split an English muffin and toast it. Put a little tomato sauce on it and sprinkle with cheese then either melt the cheese under a broiler or in the microwave.

11) Quesadillas - flour tortilla with melted cheese inside, usually made in the microwave but it can be made on the stovetop, too.

12) Hot dogs, but you're already doing that.

13) Grilled cheese sandwich.

14) Tuna or salmon salad sandwich.

As for a kid who won't drink milk or eat meat. Don't stress. DO restrict the sweets and treats, not as punishment until he drinks milk but just for general purposes. Simply don't offer anything except milk or water. I offer my DD orange juice in the morning. Sometimes she can have a smoothie or other juice like apple or grape. And keep offering a variety of other protein foods including yogurt, eggs, chicken, nuts and fish.

Both my kids wouldn't drink white milk at first. I think because I nursed them for the first year, and breastmilk is so sweet. I make them strawberry nesquik. My ds is now almost 5 and will finally drink white milk with no complaint. I just try it periodically.
My dd is almost 2 and wants to have an all fruit diet. I agree use peanut butter it's got the protein you would find in meat. My dd will only eat vienna sausages and strangely enough salmon cakes. Occasionally O'll roll up a piece of lunch meat and she'll eat that.

Getting my son to drink milk has never been a problem, but another thing he likes that may be more appealing to your kiddo, is danimal drinkable yogurts. I just poke a straw through the top and he thinks its a treat.
