Chicken Mushroom (I call it Death by Chicken though...because of the bacon fat)


chicken breasts
can cream of mushroom
bacon
flour
minced garlic

preheat oven to 350
fry bacon. save fat
rub pieces of chicken with garlic. dredge chicken with flour
cook chicken on bacon fat until lightly brown. place on ovenware. pour cream of mushroom.
bake for 30 mins

Fast Salmon

1 can of red salmon
1/2 chopped onion
pepper
olive or vegetable oil

Clean salmon and put in a bowl, add the onion and pepper and oil to taste. Serve with white rice and beans!

Chicken (or pork) in the crockpot

chicken breasts or porkchops

dry onion (or other flavor) soup mix OR dry salad dressing mix (I use Good Seasons light italian)

aluminum foil

1.place one chicken breast per square of foil
2.sprinkle with the dry mix - as much or little as you like
3.wrap as little foil packets
4.layer in crock pot - do no add any liquids
5.cook on low 8-10 hours

Comes out moist and juicy and yummy

I usually do 4-6 breasts at a time and save the extra dry mix in a zip bag for next time.

Bacon Cheddar Potato Chowder

This started out as a Kraft foods recipe but I have tweaked it.

3 cups fat free milk
1 can (10.75 oz) condensed cream of potato soup
2 cups frozen hashbrowns
1 cup shredded cheddar cheese
3 slices bacon, cooked, drained and crumbled

Mix milk and soup in large sauce pan. Stir in hashbrowns. Cook on medium heat until warm. Add bacon and cheese, stirring. Cook on medium to low heat for 10 minutes, stirring frequently.

I would add to be sure you watch this as mine tended to burn on the bottom a bit. It was very easy and super yummy!

Chewy Chocolate Yum Yums

From Chocolate: A Sweet History by Sandra Markle

~2 cups crunchy chow mien noodles

~1 cup mini marshmallows

~1-12 oz package of chocolate chips

Pour the noodles and marshmallows into a mixing bowl. Melt chocolate chips in microwave and pour into the bowl. Stir well.

Spoon the chocolate coated noodles and marshmallows onto wax paper. Allow to cool

Shape by spoonfuls into balls and place in refrigerator to set.

Eat and Enjoy!

Creamy Chicken Breasts

~6 boneless chicken breasts
~1 cup sour cream
~1 can cream of mushroom soup
~1 sleeve of Ritz crackers, crushed
~1 stick of butter, melted

Place chicken breasts in baking dish. Mix sour cream and soup together until blended and pour over chicken. Mix crushed Ritz crackers with melted butter until moistened. Sprinkle over chicken for topping.

Bake at 350F for one hour.

Easy Pork Chops

In a bowl, combine 1 egg and 2 Tbs barbeque sauce.

In a zipper top bag, mix 1/3 cup dry breadcrumbs, 2 tsp parmesan cheese,
1/4 tsp oregano and 1/4 tsp lemon-pepper seasoning (I didn't have the last one so I didn't use any)

Dip pork chops in egg mixture, then place in zipper bag and shake 'til coated. I used three boneless pork chops and probably could have done a fourth.

Place on greased baking sheet (I lined mine with aluminum foil instead, for easier clean up) and bake for 1 hour at 325 degrees F.

Two step Sweet N Tangy Chicken

4 boneless chicken breasts
1 can tomato soup
1 Tbsp brown sugar
1 Tbsp vinegar
1/4 cup water

1) Brown boneless chicken breasts

2) Add soup, water, vinegar and sugar. Cover and simmer until meat is cooked through and sauce is warm.

WW Chocolate Cake

1 regular box chocolate cake mix
1 cup diet cola (I used caffeine free diet coke)

Pour cake mix into greased baking pan. Add soda. Stir to mix.

Bake for 20-22 minutes at 350 degrees F. Do NOT overbake.

I dusted mine with powdered sugar.

Cola Chicken

makes 4 servings

4 skinless, boneless chicken breasts
1 cup catsup
12 oz can diet cola

Put chicken in non-stick skillet. Pour catsup and diet cola over the top of chicken. Bring to boil. Cover, reduce heat and cook for 45 minutes. Uncover, turn up the heat and continue to cook until the sauce becomes thick and adheres to the chicken. Sauce becomes an incredible bbq type sauce.

Tortilla Casserole
1 pound hamburger or ground turkey
1 pkg soft tortillas
1 pkg taco seasoning mix
1 can diced tomatoes
2 cups cheddar cheese

Brown hamburger, drain. Add taco seasoning mix to hamburger. (I also added the water as indicated on the mix, but the original recipe doesn't mention it.) Simmer ~5 minutes. Add tomatoes, stir and simmer 5 minutes. In large casserole dish, place 1/4 of meat mixture over bottom of dish.

Layer as follows: tortilla, meat, cheese. Continue layering in this order until all ingredients are gone. I sprinkled a little extra cheese on the top.

Bake at 350 degrees F for 20-25 minutes or until heated through. Serve with sour cream, salsa, or guacamole.

Scalloped Potatoes

-2 lb peeled potatoes, sliced thin
-2.5 cups half and half
-1 tsp minced garlic
-1.5 cups shredded cheddar cheese

Spray baking dish with non-stick spray. In saucepan, simmer potatoes, half and half, garlic, 1 cup cheese, and salt and pepper to taste for four minutes. Pour into baking dish, sprinkle with remaining cheese. Bake in 350 degree F oven for 45 minutes.

Hamburger Rice Dish

1 lb hamburger
1 can cream of mushroom soup
2 cups water
1 cup long grain rice, uncooked (I used brown rice)
1 envelope onion soup mix

Brown hamburger, drain. Add soup, water, rice, and onion soup mix. Cover and simmer for ~20 minutes. I threw in some frozen peas just before it was done.

Alfredo Sauce

based on the sauce at the Olive Garden (italian restaurant chain):

-8 oz cream chees, cut in bits (I used the reduced fat kind)
-3/4 cup parmesan cheese, grated
-1/2 cup butter or margarine
-1/2 cup milk (I use 1 or 2%)
-8 oz fettucini, cooked and drained

In large sauce pan, conbined cream cheese, parmesan, butter, and milk. Stir constantly until smooth. Toss pasta lightly with sauce.

Easy Brownies

Melt in the microwave or on top of stove:
4 squares unsweetened baking chocolate (4 oz)
2 sticks butter or margarine

Add:
2 cups sugar
4 eggs
3/4 cup flour

If desired, you can add 1/2 cup of any of the following: chocolate chips, nuts, or coconut.

Bake in 400 degree F oven for 20-25 minutes. Do NOT overcook.

1 c sugar
1 c white corn syrup
1 c peanut butter
6 c corn flakes

Bring sugar and corn syrup to boil,then remove from heat.
Add peanut butter and mix well.
Pour over corn flakes.
Shapes into balls on waxed paper,or spread in buttered pan.

Easy(er) Peach Cobbler

1 box (or bag) yellow or white cake mix (cheap stuff works great)
1 17 oz can peaches, drained, reserve juice
1-1/3 c. reserved peach juice
1 stick butter, sliced

Spread peaches in bottom of 9x13 casserole dish. Cover with cake mix. Drizzle peach juice over top. Scatter butter slices evenly over top. Bake at 350F until golden brown and bubbly. Serve while warm (cold is good too!) with vanilla ice cream.


*I think its even better than when made from scratch!

Strawberry Shortcake Dessert

2 pkg. cream cheese, softened
2 pkg. cool whip, thawed (I use light)
2 loaves or one cake (angelfood)
1-2 cans strawberry pie filling (depending on how much you like, I use 1)

Tear angelfood cake into chunks (1-1/2" -2" or so). Set aside. Cream together cool whip and cream cheese. Slowly mix in chunks of cake. Press into 9x13 casserole dish until even. Top with strawberry pie filling. Refrigerate until ready to serve.

*I got this recipe from a woman at work, and it is AMAZING. The first time I had this I made myself sick from eating too much of it! For some reason I keep thinking it needs sugar but that's not what is on my recipe card, so I will double check and edit this later if it is wrong.

1 (8.25)can Pineapple Chunks, undrained
1 (11oz)Manndarin Oranges, drained
1 (8oz)sour cream
1 c flaked coconut
1 c mini marshmallows




Drain pineapple, reserving 1 Tbs juice.
Mix pineapple, reserved juice and rest of ingred,toss lightly. Cover.
Refrigerate til chilled.

chocolate peanut butter parfaits

3tbsp.milk

3tbsp.smooth peanut butter

1 cup thawed cool whip

1pkg.instant chocolate pudding

add milk to peanut butter in medium bowl. stir with wire whisk until well blended, add cool whip and stir well. set aside.
make pudding as directed on box.spoon half the pudding into 6 parfait glasses, top with peanut butter mixture, cover with remaining pudding. chill for 30 minutes. ( my kids LOVE when i make this).


3 step peanut butter squares

1 egg

1cup smooth peanut butter

1/2 cup sugar

1 cup chocolate chips

oven to 325.
mix egg, peanut butter and sugar until well blended.
spread into 8 inch pan
melt choclate chips in microwave and spread on mixture in pan.
bake 20 minutes and cool completely.


slow cooker pulled pork sandwiches

1 boneless pork shoulder

3 onions sliced and seperated into rings

1/2 cup your fave bbq sauce

8 buns( your choice)

put meat in crock pot, top with onions, and pour over sauce.
cover with lid
low 8-10 hours ( high 4-5 hours)
remove meat and use two sharp knives to shred meat and put into buns. ( toast buns if you wish too)

1 lb ground beef
1 pkg oriental flavored ramen noodles
1 (14.5)diced tomatoes
1 can whole kernel corn


Cook and drain beef.
Sir in the flavor packet from the noodles, tomatoes, and corn (with juice). Break up the noodles slightly, and add them to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for 10 min,til noodles are tender. Stir occasionally.

You can also add anything to this,garlic n onions cooked w/beef,peas instead of corn...etc.
